Once, in a creative impulse that just overtook me in the kitchen, I cooked a stew with vegetables. The taste of this seemingly simple dish exceeded all my expectations, so I share it with you. It is suitable for both a festive table and a family dinner.
First, weโll announce the entire list of products that will be needed. In fact, I cooked on the principle of "all the vegetables that are in the refrigerator." The composition of the dish โMeat stewed with vegetablesโ was as follows:
400 g lean pork;
2 medium carrots;
1 large onion;
2 pcs. sweet pepper, preferably different colors for beauty;
2 pcs. Tomatoes
2 cloves of garlic;
salt;
pepper.
We start cooking. As my culinary experience shows, to make a dish not only tasty, but also look aesthetically pleasing, stew with vegetables requires the correct cutting of all ingredients. For this a knife must be sharpened well. Thaw the pork thoroughly and rinse it under running water. It needs to be cut with very small cubes, about 1.5 cm. So it is better put out and will literally melt in your mouth. You can immediately salt and pepper the meat, and then leave it to marinate for a while. After all the vegetables are washed and peeled, we begin to chop them.
Onions need to be cut in half rings and slightly sprinkled with vinegar (a few drops are enough). It is best to grate carrots with straws on a special grater or pass through a plate for vegetables of a food processor. Cut the pepper into strips, and the tomatoes into cubes.
Cook a large, preferably deep frying pan. Pour a little olive or sunflower oil, fry pieces of meat in it for several minutes and transfer to a saucepan in which you will stew. Now, in the same pan, we are sending vegetables one by one. First, onions, and then, slightly fried, add carrots. It is the turn of pepper - and at the very end of the tomato. Stir well and keep it on fire for a while so that the vegetables give their juices. Now put the meat in a saucepan and pour this vegetable sauce. You can add some more tomato juice or water. For aroma, you can pour 50-100 g of red wine. It will give a special touch of taste to the dish.
In order for the stew with vegetables to be really very soft, it should be cooked longer. Most of the fluid should boil away. Fifty minutes will be enough. Pour chopped garlic cloves 10 minutes before cooking.
Serve all this on the table on a common large plate, after sprinkling it with fresh herbs. This dish is self-sufficient and does not require any side dishes or additions in the form of salads. Serve black or white bread to the table.
