Have to take:

• pita - 2 pcs.;
• eggs - 2 pcs.;
• salted cheese or feta cheese - 200 g;
• cottage cheese - 250 g;
• kefir - 200 ml;
• salt - at your discretion;
• oil - 20 g.

Cooking:

1) Beat kefir with eggs.
2) Grind the cheese coarsely with a blender and mix with cottage cheese, salt.
3) Grease a baking sheet with oil, lay on it a pita bread with overlap from one edge.
4) Take the second with your hands coarsely.
5) Soak one third of these pieces in a mixture of kefir and egg.
6) Put them on an untouched piece of dough.
7) Thoroughly sprinkle with half the resulting cheese. So make three layers.
8) Fold the edges of the pita bread on a baking sheet with an envelope.
9) Preheat the oven to 180 degrees. Bake for half an hour, greasing with the remaining mixture.

Yeast dough

• suluguni - 350 g;
• yolk - 1 pc.;
• water - 190 ml;
• flour - 290 g;
• sugar - 1 tbsp. l .;
• salt - 1 tsp;
• dry yeast - half tsp;

1) Mash butter with margarine.
2) Add sour cream, sugar, salt and water.
3) Mix, add flour and knead the dough with light movements.

For filling:

• potatoes - 300 g;
• feta cheese - 100 g;
• testicle - 1 pc.

Cooking:

1) Boil potatoes in their skins, cool.
2) Peel, crush in mashed potatoes.
3) Rub the feta cheese on a small grater, mix it with potatoes.
4) Divide the dough into eight equal parts.
5) From each part, make a cake 10 cm wide.
6) Put the filling in the middle and cover the edge. The recipe for khachapuri is very simple, and if you take good flour, it will not float.
7) Flatten flat cakes to give them the desired shape.
8) Shake the egg with a whisk, smear each khachapuri.

• flour - 3 cups.

Kneading:

  3. Quench soda with vinegar and add to the dough.

Kefir dough

Have to take:

• flour - 700 g;
• kefir - 500 ml;
• sugar - 1 tsp;
• salt - at your discretion.

Kneading the dough:

From the kefir dough , very nutritious and crunchy khachapuri is obtained. The recipe for yeast dough is much inferior to it.
1) Kefir is heated to room temperature. You can take any fat content.
2) Pour flour slowly, starting to knead.
3) Add salt and sugar and knead well.
4) Let stand for about 20 minutes.
Meanwhile, make the filling.

Have to take:

• cheese (salted) - 700 g;
• butter - 100 g;
• soda - as needed;
• sunflower oil - 4 tbsp. l

Cooking:

1) Make a cake from the dough we have already prepared.
2) Sprinkle it with a little soda.
3) Knead the dough again and repeat the procedure three times.
4) Cover with a towel and send for an hour to a warm place.
5) Cheese grate well, this time large.
6) Wait until the test is ready and divide it into five parts.
7) Form a cake using a rolling pin.
8) Put the filling in the center of each of them and add a little butter.
9) Collect the edges in the center, creating a “bag”.
10) Roll each one to the size of the pan is not very thin. It is best to take a frying pan with a corrugated coating.
11) Heat a frying pan without oil and put to fry until golden brown, covering with a lid.
12) Turn over and continue to fry without a lid for 3-4 minutes.

• sugar - 1 tsp;
• dry, active yeast - half a bag (can be replaced with natural ones - 5 g);

6) Wrap well in a blanket and send to a warm place for two hours.

Filling:

• Suluguni cheese - 300 g.
• feta cheese - 300 g.
• Adyghe cheese - 150 g.
• greens - at your discretion;
• egg - 2 pcs.

Cooking

1) Chop greens very finely.
2) Rub the cheese on a coarse grater.
3) The dough is divided into parts.
4) Roll out large circles, like for pizza.
5) Distribute a portion of the greens and cheese filling in a circle and roll it up, leaving a place in the middle.
6) Connect the edges of the "boat".
7) Put a little filling on the empty part.
8) Smear the edges of our “boat” with beaten egg yolk.
9) Preheat the oven to 180 degrees.
10) Send khachapuri there for 15 minutes before boiling the filling.
11) Drive a chicken egg in the middle.
