How to make Mozzarella cheese at home? Unlike the previous recipe, this one is somewhat more complicated, both in composition and in the execution process.
So, it will take four liters of milk with a short shelf life, one and a half teaspoons of citric acid and a quarter teaspoon of rennet, 170 ml of non-chlorinated cold water.
The process of how to make Mozzarella cheese at home is as follows. In a deep saucepan, mix milk and citric acid, and then heat them to 32 degrees. Remove from heat and add the enzyme diluted in the above amount of water. Mix everything thoroughly and leave for a minute to form a soft cheese.
Transfer the resulting milk clot into a colander, placed in a deep container, cut it into small squares, and send the serum formed in the pan to the stove and heat to 85 degrees.
Maintaining a low heat, each piece should be lowered for 10 seconds into the serum, then removed and stretched, giving the resulting product a mozzarella texture. This is how the process of creating this delicate cheese looks like.
When you want something harder
The above two recipes allow you to create soft varieties. But for fans of the Dutch type, there is an appropriate recipe.
So how to cook hard cheese? To create it, you need: half a liter of milk and half a kilogram of cottage cheese, half a teaspoon of soda and salt, as well as butter weighing 70 grams.
The process of creation is as follows: grated cottage cheese is poured into boiling milk, stirring constantly, the resulting mixture is again brought to a boil and boiled for about 10 minutes. Then they transfer it to cheesecloth, located on a colander, and slightly press, thereby getting rid of excess fluid.
Without leaving the semi-finished cheese to cool, it should be transferred to a pan, include a mixture of soda, oil and salt in it and mix quickly until the mass becomes homogeneous and will not easily move away from the walls. Next, remove the pan from the stove, allow it to cool slightly and proceed to modeling the form. Now it remains only to cool the finished cheese, for which it will be kept in the refrigerator for 20-30 minutes in a form oiled.
