Vegetable stew with meat

For this dish you need:

400 g of veal meat, one eggplant, 4 peeled tomatoes, one zucchini, 2 sweet peppers, 100 g of frozen green beans, 7 onions, a clove of garlic, a glass of vegetable broth, a tablespoon of spiced cut herbs, 3 tablespoons of vegetable oil, to taste - salt.

Defrost the green beans first. Peel the eggplant and cut it along quite thick slices, put them in a colander, sprinkle with coarse salt. For 30 minutes let the bitter juice drain a little, then rinse the eggplant, dry it a little and cut into cubes. Rinse the meat, cut it into cubes and fry in the pan in which chopped onions were previously spassed in oil. Let the meat soak a little onion flavor for 10 minutes, sometimes stirring with a wooden spoon. It is necessary that the meat is slightly dried. In the meantime, peel and thoroughly rinse all the other vegetables: cut the tomatoes into small squares, slices bell peppers, and zucchini cubes.

When the meat becomes a little golden in color, add zucchini, eggplant, thawed and chopped beans, and bell peppers to the pan. Cook for about five minutes, then sprinkle with chopped herbs, put the tomatoes, washed, peeled and crushed garlic clove, pepper, salt. Pour the hot broth there in a thin stream and continue cooking over low heat for 45 minutes, pouring the broth, if necessary. After the end of cooking, slightly salt, transfer the stew to a serving heated deep dish and serve to the table.

Meatball stew with cream and vegetables.

Take 100 g of turkey (or chicken) minced meat, a teaspoon of mustard, one potato, half an onion, a quarter of bell pepper, a third of carrots, dill and parsley roots to taste, a garlic clove, a little butter, 20 ml. cream, a pinch of paprika, green onions.

First you need to cook the minced meat from the meat that you have chosen, pepper, salt. Put sweet mustard, mix well.

Cut the potato into large pieces, chop the onion, carrots and bell pepper into thin strips. Fry all the vegetables together over high heat for 5 minutes, stirring regularly.

Then you need to put all the vegetables in a pot, pour finely chopped roots of greens, chopped garlic, put some butter there, add meatballs, sprinkle with sweet ground paprika, pour water so that the meatballs look a little.

Put the stew pots in the oven, which is preheated to 220 degrees, for 40 minutes. Before serving, pour the cream on the stew and sprinkle with green onions.

Cut the onion into thin half rings, celery and bell pepper - in small cubes. Cabbage must be chopped. Cut eggplant and tomatoes into large pieces.

The meat should be fried over high heat for 1-2 minutes, add onions to it.

Then lay the prepared vegetables in layers: eggplant, celery, tomato, pepper. The last layer is laid out cabbage. Sprinkle with pepper and salt to taste, cover with a lid and simmer for about 40 minutes in your own juice.

Put the prepared stew on a dish, carefully turning the pan so that the meat is on top of the vegetables.
