The visiting card of Chinese cuisine can be safely called pork in Chinese - for many it is a favorite dish that is popular all over the world. There is more than one known method of cooking pork, each of them is good in its own way. Combines all variations of recipes with one ingredient - sugar or sweetener, sweet fruit syrups, sweet and sour sauces. It is thanks to them that the meat turns out so juicy, tasty, incredibly aromatic, with a pleasant piquant note.
Chinese Starch Meat
Chinese meat dishes are most often prepared from pork and differ from the usual methods of cooking a spicy sweet note, spiciness. Who once tasted well-prepared meat in Chinese starch, must have noticed for himself how juicy it is. And certainly this person will want to cook this dish on his own. We have collected some of the most common recipes for Chinese meat in starch and are happy to present them to you.
Pork in sweet and sour sauce
The cooked sweet meat in Chinese with starch turns out so appetizing that even those who donβt really like mixing tastes will like it. For cooking you will need:
- 500 g of pork;
- 150 ml of pineapple juice;
- 2 tbsp. l vinegar
- 2 tbsp. l soy sauce;
- 2 tsp starch;
- 2 cloves of garlic.
Cooking
If desired, you can add a few slices of pineapple to the dish, for lovers of tomato flavor - a little pasta.
- Rinse the pork meat, remove the film, veins and body fat.
- Dry the ingredients on paper towels and start cooking.
- Cut the meat into small slices, place in one container.
- Add a little salt, because soy sauce is also included in the recipe, add a little pepper if desired.
- Mix the meat thoroughly with your hands, add spices.
- Pour the pan with vegetable oil and heat. Lay out the pieces of pork and fry a little on each side for a minute over high heat to provide the meat with an attractive crust.
- Mix pineapple juice in one bowl with soy, add garlic, vinegar and starch, passed through a press. Pour the meat with this mixture and bring to a boil over high heat, stirring occasionally.
- After 5-7 minutes, delicious and fast pork in Chinese will be ready. Serve this juicy dish with rice and vegetables, pour rice with the rest of the sauce from the pan and sprinkle with fresh herbs.
Gabajou Pork
Ginger is able to add piquant taste to pork. It is a very common ingredient in Chinese cuisine. Let's take a closer look at this recipe.
To prepare you need:
- 300 g of pork carbonate;
- 3 tbsp. l starch;
- 120 ml of oil;
- 40 ml of soy sauce;
- 2 cloves of garlic;
- 20 g of ginger root.
Recipe
Meat is even softer and juicier if you hold it a little in the marinade before putting it in a frying pan. Therefore, we prepare a delicious marinade for Chinese meat in starch:
- Rinse the meat, dry well and cut into thin, small pieces. Set aside.
- Starch mix with water in a ratio of 1: 1.5. Put the pieces of pork meat in the mixture and let stand for 15 minutes.
- Then, after 15 minutes, add soy sauce to the bowl.
- Peel, rinse and ginger on the finest grater. Do the same with a few cloves of garlic.
- Dilute the mixture with 150 ml of water and mix. Leave it for 5-7 minutes.
- Anneal the wok and pour over the vegetable oil. Heat the oil, remove the pieces of pork from the sauce with a slotted spoon, shaking off the liquid, and put in a pan.
- Fry portionwise the meat over high heat for several minutes on each side until a bright crust appears.
- Put all the meat in a pan, mix the sauce by lifting the starch from the bottom, and pour into the wok. Bring to a boil.
Sweet and sour meat is ready. It remains only to prepare a side dish - and the dish can be served at the table. Incredibly delicious!
Pork with vegetables
Have you ever tried fried cucumber? Probably, it will seem strange to you, but, in fact, very tasty. Chinese-style meat in starch with vegetables is a real treat, and you should definitely try making this yummy for dinner. You will need:
- 500 g of pork;
- 1 pc of eggplant, pepper;
- 2 cucumbers;
- 1 small zucchini;
- 1 large carrot;
- 6 cloves of garlic;
- 150 ml of soy sauce;
- 2 eggs;
- 1 tbsp. l sugar, tomato paste, vinegar;
- 50 g of starch.
Cooking method
- Process the meat in the same way as in the first recipe. Then add only proteins and 80 g of soy sauce to it. Mix well.
- Peel and chop the carrots.
- At the pepper, remove the stalk and white walls, also cut into strips.
- Peel the zucchini and cucumbers and, as you might have guessed, cut into strips, but do not grind too much. Pieces should be conveniently grabbed with Chinese chopsticks.
- Add soy sauce to the vegetables and roll in starch. Put in a pan, fry for about 5 minutes, but stir at the same time.
- Direct the finished product into a separate container.
- Dip the pieces of meat in starch and fry in a pan for 10 minutes on each side.
- Transfer vegetables to the meat and start cooking sweet and sour sauce. In a glass of water (approximately 200 ml), stir the tomato paste, completely getting rid of lumps, starch, the remains of soy sauce and a little vinegar. Put the container on the fire, heat and add sugar. Stir thoroughly again to dissolve the crystals.
- Pour the sauce into the pan, stew the dish in it for 5-7 minutes and serve.
It can be used as an independent, however, if you tried this dish in a Chinese house, you would be offered rice as a side dish.
Cooking Tips
To make meat in Chinese starch at home successful, here are some tips to help you create a truly delicious, juicy dish:
- First of all, choose meat with a minimum amount of fat. A neck or loin without ribs is suitable.
- Cut the meat into small pieces: firstly, it will be fried faster, such pieces are better and faster soaked; secondly, they are convenient to take with chopsticks.
- Use wok for frying meat. If this is not the case, then choose a pan with a thick bottom and high sides.
- And, of course, the main secret is starch, in which each piece of meat is breaded. So you can provide an excellent crisp, preserving the richness of the dish.
