Cake "potato" - an original and beloved by many delicacies for a long time. We all remember him from childhood for a unique and very original taste, unlike traditional products baked from dough, and a nice shape in the form of a potato with white eyes made of cream. There are a lot of ways to make this confectionery: a “potato” cake from cookies, from biscuit dough, from ground white crackers with various additives, and the cream on which it is kneaded also differs in various recipes. However, a classic cake is made from fresh biscuit chips, which are mixed with butter chocolate cream.
So, the “potato” cake from biscuit is prepared as follows. The baked biscuit dough is wiped through a grater or passed through a meat grinder. In a bowl or pan, biscuit crumbs are very carefully mixed with chocolate cream prepared in a variety of ways.
The first cream recipe: butter is whipped in a mixer, then the condensed milk is added gradually, in small portions, continuing to whisk until the cream is homogeneous.
The second recipe: butter is beaten very well, then sifted icing sugar is added to it in a tablespoon and, continuing the process of whipping, the mass is brought to a homogeneous plastic consistency. As the basis for the cake, you can prepare an butter cream in milk and eggs. For this, milk syrup is prepared from sugar, milk and eggs as follows. Milk with sugar is heated until sugar dissolves, eggs are beaten in a separate container and during beating, slowly, gradually pour the milk-sugar mixture. Then, the cooled egg-milk base is added to the butter, previously whipped in a mixer. At the end of the cream preparation process according to one of the listed recipes, cocoa is put in it. The biscuit crumbs mixed with chocolate cream are left for one to two hours to soak well, then cakes are formed from the biscuit mass and put in the refrigerator for cooling.
The “potato” cake from cookies is prepared using the same technology, but instead of biscuit crumbs, crushed cookies are placed in it . A “potato” cake made from cookies or crackers is the easiest and fastest way to make this treat. Very often, instead of butter cream, crumbs of cookies or ground crackers are mixed with condensed milk, in which liquid chocolate or cocoa powder is added. A potato cake with condensed milk is the most simplified way to make it, but it still turns out very tasty.
By the way, the form of cakes can be not only in the form of potatoes. From the mass prepared from cream and crumbs, spruce cones, bunnies, hedgehogs, etc. are formed. To get, for example, a spruce cone, a “sausage” with a pointed tip is rolled up from the dough, and then it is cut across the entire surface with the tips of scissors, making spruce scales.
The final step in making a “potato” cake is to glaze its surface with chocolate icing, or the cake is simply rolled in cocoa powder. For the icing on the plate, heat the chocolate bar and add a little butter to the hot chocolate. A cake dipped on a wooden stick is dipped into the icing, then laid out on a cutting board, allowed to cool and garnish with cream, squeezing small “eyes” into the indentations made with a fork.
When preparing a “potato” cake from cookies or biscuit crumbs with butter-based cream or with condensed milk, you need to let the mixture stand for it to soak well, then the mass will turn out to be homogeneous and tender. Only after the "dough" is well soaked, cakes are formed from it and put in the refrigerator. If the treat is prepared for adults, it’s good to add a little cognac or rum to the mixture.
