Zrazy is a dish of national Russian, Belarusian, Ukrainian, Polish and Lithuanian cuisines. Strictly speaking, zrazy is a stuffed patty. The meat and filling for this dish can be varied, and for each people they vary in accordance with preferences.
History
There are many opinions that zrazy came to Russian cuisine from Italy. Zrazy was originally made from beef meat with a variety of fillings. Mushrooms, eggs, vegetables and even cereals are put inside. When the main part is made from a whole piece of meat, we get torsions.
Modern housewives make zrazy with an egg from a combination of several varieties of meat. Whole chicken and quail eggs are laid inside, as well as vegetables, herbs and spices.
How to choose meat for zraz
First of all, the meat for the dish should be fresh. If you use frozen ready-made minced meat, then it should be completely thawed. If you make minced meat yourself, then the meat should be washed and dried well, then pass through a meat grinder.
Meat zrazy with an egg are juicy and tasty if they combine meat and minced meat. If you are not a supporter of such a combination, be sure to add onion and spices to the minced meat - this will add juiciness and piquancy.

Ingredients for the dish:
- 500-600 grams of minced meat;
- a glass of milk;
- 4 chicken eggs or 8-10 quail;
- a bunch of greenery;
- large onion;
- 100 grams of white bread;
- salt, spices, vegetable oil for frying.
Zrazy with an egg, the recipe of which we describe, is prepared quite quickly and simply. Like any dish, they are best consumed immediately after being prepared, while they are hot and fresh.
Step-by-step instructions for preparing meat zrazy with filling
We proceed to small chopping onions. Put the eggs to cook for 10-12 minutes - they should be hard boiled. At the same time, soak the bread in milk in a separate container. So, almost at the same time your eggs are boiled, the bread absorbs milk and the onions are sliced. After the filling is cooked, it should be cut into cubes.
In order to cook zrazy with an egg, the onion must be fried until golden brown, and then finely chopped greens are added to it. You can take onions, dill and parsley, more exotic, but your favorite options for greens. We begin to mix the filling. To do this, in a large container, gently combine eggs, fried onions and herbs, as well as salt to taste.
Now you can take the time to stuffing. It is worth noting that one-component minced chicken may be somewhat dry, but this is a matter of taste. In this case, cutlets with filling can be served with sauce or vegetables.
In the plate, where the soaked bread is located, add the egg, salt and spices and mix everything thoroughly. Then add minced meat here and knead again. Do not rush to sculpt zrazy right away. Stuffing should stand for a while and absorb the egg, bread and milk. Then remember the mince for a little while, and make a lump made of it several times on the bottom of the plate. This will give the meat pliability and prevent the cutlets from disintegrating during cooking.
Zrazy with an egg (pictured above) are cooked in the oven, so it must be heated to 200 ° C. We proceed to the direct manufacture of cutlets with filling. To do this, make a 1 cm thick circle of minced meat on the palm of our hands. Top with the egg, onion, and green stuffing and form the cutlet. Ready zrazy can be rolled in breading or laid on a baking sheet in its original form. Top them should be greased with oil and put to bake for 45-50 minutes.
Zrazy with an egg can be served as an independent dish, or with a side dish. For example, mashed potatoes or steamed vegetables are an excellent option for such a dish.
Zrazy with mushrooms
Cutlets "with a surprise" inside can be cooked with mushrooms. To do this, you will need:
- 200 grams of your favorite mushrooms;
- 2 boiled eggs;
- large onion;
- 500 grams of minced meat;
- one raw egg;
- a glass of milk and a couple of slices of loaf (about 100 grams);
- salt, spices and cooking oil for frying.
Meat zrazy with an egg, the recipe of which includes mushrooms, is more juicy and unusual. With this dish you can well surprise your loved ones at a dinner party or Sunday lunch.
We begin to prepare the filling. To do this, fry finely chopped onions until golden brown, then add mushrooms to it. They should also be fried until tender, so that the released water evaporates. In the filling, you need to add crushed eggs, you can also greens if desired. Salt, pepper and spices are also added to taste.
Now we start cooking minced meat. If you cook it yourself, then make sure that the consistency is uniform, without streaks and large pieces. It is worth paying attention to the fat content of the meat, because during cooking the fat will stand out and the cutlets will turn out to be completely tasteless. That is why it is not recommended to take one-component minced pork, it is better to add beef or veal to it.
Add the egg, salt and spices to the minced meat. A loaf soaked in advance should be squeezed from excess milk and combined with minced meat. Everything should be mixed well.
We cook zrazy of approximately the same size and shape. To do this, spread about 100 grams of meat on the palm and evenly distribute in a rounded shape. In the center we put about 1 tablespoon of the filling and form the patties.
Fry the zrazy in a pan until golden brown, and then shift it into a deep baking dish. At the bottom we pour about half a glass of salted water or broth, a little butter and bake until cooked for another 20-25 minutes. We serve a dish with fresh vegetables and herbs or with boiled potatoes.
Zrazy with a Whole Egg
Many housewives want to cook something unusual for the holiday, such as chops, meatballs, zrazy with an egg, a recipe with photos of which have long been stored in cookbooks. However, many are afraid of experimentation or what they will do differently than in beautiful pictures in books.
In order to find out whether it works out or not, it's worth trying to do something. You can use a simple recipe for cooking cutlets stuffed with whole eggs. If you do not want the zrazy to be too large, then quail eggs should be preferred.
For cooking you will need:
- 800 grams of minced meat;
- one dozen eggs (1 in minced meat, 1 for breading and 8 pieces boiled hard-boiled);
- onion;
- 6 tablespoons of flour;
- breadcrumbs - 5 tablespoons;
- salt and pepper to taste, sunflower oil for frying.
Finely chop the onion and add minced meat, 1 raw egg, salt and pepper to it. Mix everything well and let stand a little. Boil 8 eggs in advance and peel them. The eggs must be cooled. Roll the egg in flour and wrap it in a fur coat of minced meat. Roll the patty with the filling in flour, then in the beaten egg, and then in breadcrumbs and fry in a pan until golden, crisp and fully cooked. Serve the dish with fresh vegetables (cucumbers, tomatoes or bell peppers), as well as with mashed potatoes and sauce.

Serving zrazy can be done as an independent dish, however, it is worth decorating them with greens and lettuce. Fresh vegetables are perfect as a side dish for such a dish. You can use potatoes, for example, in their skins or mashed potatoes.
