- 70 gr. asparagus beans;
- 50 gr canned or stewed peas;
- 100 gr. creamy cheese (for sauce);
- 50 gr Parmesan cheese
- 1 lemon
- 1 clove of garlic;
- olive oil;
- vegetable oil;
- a little basil (preferably a lemon variety);
- salt, black pepper.
Step-by-step instructions for creating a dish
The Primavera pasta recipe is not complicated, the most important thing in this dish is to cook the zucchini properly. Getting started:
- Chop vegetables. We cut the broccoli in half, cut off the ends of the green beans and shred the remainder into 5 cm sticks. We chop the zucchini and salt them. Peel the garlic and grind it on a fine grater.
- Fry zucchini in a pan until crisp. We must not allow the vegetable to turn into porridge. 1 minute before the end of frying, add chopped garlic.
- In the prepared pan with water, we lower the pasta, not forgetting to add the salt and vegetable oil to the water first. Cooking until half-ready. 5-7 minutes before the end we start the vegetables. Drain the water from the pan and leave it a little under the paste for the sauce (about 50 ml).
- Cut the leaves of lemon basil, cut the Parmesan cheese on a fine grater and pour the lemon juice into a separate container. Shred the zest on a fine grater.
- In a saucepan with pasta and vegetables, add zucchini, a little lemon zest and a couple of tablespoons of its juice, cream cheese, olive oil, basil. Salt and pepper. Add vegetable broth, mix everything thoroughly, leaving the paste on low heat for just a couple more minutes.
We spread the dish on a plate, chopping the remaining lemon zest. Add cheese, basil leaves - and the pasta is ready!
Primavera pasta recipe with mushrooms and asparagus
Another popular variety of this pasta is a dish made with champignons and asparagus. To prepare a serving for 4 persons, it is necessary to prepare the following products:
- 300 gr pasta (your choice: more often it is spaghetti or linguine);
- 200 gr. champignons;
- 250 gr Asparagus
- 120 gr. cherry tomatoes;
- 60 gr Parmesan cheese
- 1 PC. red bell pepper;
- 200 gr. chicken or meat broth;
- 1/2 cup of milk;
- 1 tbsp. a spoon of flour;
- a bunch of parsley;
- basil leaves;
- olive oil;
- 3 tooth. garlic
- salt, black pepper.
Step-by-step instructions for cooking pasta "Primavera" with mushrooms and asparagus
In a heated frying pan, a little fry the garlic, add red bell pepper and simmer until soft. Next, you need to start the mushrooms, asparagus and fry until cooked. After about 5 minutes, the vegetables will be processed, and you can prepare the sauce: pour in the flour, previously diluted with 3 tablespoons of water, and leave to stew for another 1 minute.
In parallel, boil pasta in brackish water to a state of semi-readiness.
Add chicken or meat broth, milk, salt and pepper (if necessary) to the pan and cook another 5-7 minutes, until the whole mass becomes thick. Add the pasta and mix.
