This jam does not require much labor, as it seems at first glance. Just to be completely prepared, nuts need a lot of time.
Green walnut jam: classic recipe
The ratio of products: green nuts - 100 pieces, sugar - 2 kg. Also, cloves - about 20 buds, lemon. Cooking process:
- Peel the nuts from the top skin.
- Put in cold water, which will need to be changed about 4 times a day. Soak nuts in water for two days.
- Make lime water: slaked lime (half a kilo) is poured with water (5 liters). Stir and insist 4 hours. Strain this solution through cheesecloth. Remove the nuts with clean water and place in a lime mortar. Stir nuts periodically. Withstand them for 24 hours in lime water.
- Flush the nuts. To make the jam delicious, you need to pierce each nut several times with a sharp object. After that, soak them again in cold water for two days.
- Now remove the nuts from the water and place in boiling water for 10 minutes. Then flip it over in a colander.
- Make a syrup in which green walnuts jam will be cooked. Sugar syrup recipe: combine sugar with two glasses of water, bring to a boil and remove the foam.
- Put cloves, zest and lemon juice in the syrup. Combine with nuts and boil. Repeat this cycle three times: bring the jam to a boil and remove from heat. Then cook until tender until the nut is soft.
