Step-by-step recipe for making the Kremlin cake

Cake is an integral part of any holiday table. It is difficult to imagine a birthday, anniversary or wedding celebration without dessert. One of the most popular and favorite cakes in Russia is the Kremlin Cake. The recipe with a photo for clarity is presented below.

Essential ingredients for dough and lemon filling

To prepare the dough you will need to take the following products:

  • wheat flour - 350 g (about 2 glasses);
  • sour cream - 200 g;
  • butter (margarine can be used) - 200 g.

To prepare the lemon filling necessary for the Kremlin cake, you will need the following products:

  • granulated sugar - 120 g;
  • medium-sized lemon - 1 pc.

Essential ingredients for cream

We will need to prepare two types of cream, namely protein and butter with yolks. Necessary products for this:

  • egg whites - 6 pcs.;
  • granulated sugar - 400 g;
  • butter - 200 g;
  • egg yolks - 6 pcs.

It is worth noting that all of these ingredients, namely their quantity, were proposed for the preparation of the Kremlin cake with a diameter of about 20 cm. If you want to make a larger cake, proportionally increase the number of all the ingredients presented.

Kremlin cake: recipe step by step with photo

First of all, you should do the test for the cake. Pour 2 cups flour onto a clean surface (after sifting through a fine sieve). Grate the butter (best if it is slightly frozen). Then mix the flour with butter. Add fat sour cream (200 g), mix thoroughly and immediately begin to knead. We divide the finished dough into 6 equal parts, wrap each part in cling film or in special baking paper and send it to the refrigerator or balcony for a couple of hours.

After this time, take out the dough. Each piece is rolled into a thin round pancake. From the scraps left over from the six cake layers, we prepare the seventh cake cake and topping for the cake. It is important to bake each cake separately. We spread the pancake on a baking sheet, prick the dough with a fork and bake in a preheated oven at a temperature of 200 degrees Celsius 10-15 minutes until it turns red.

Ready cakes are allowed to cool a little.

According to the classic Kremlin cake recipe, you need to make lemon filling. Lemon should be grated on a medium grater. Rub with the peel. It is advisable to remove the bones beforehand. After add 1 cup sugar, mix thoroughly.

Initially, we begin to prepare protein cream for the Kremlin cake. Pour 200 grams of sugar into the proteins, mix and put in a water bath. It is important not to stop stirring all the time during cooking. Bring the temperature to 73-75 degrees Celsius. Then we transfer the proteins to a deep container and beat at a fairly high speed with a mixer. The result should be a thick lush cream.

Beat the protein

Now you need to prepare an oil cream. To do this, take the remaining yolks, add 200 grams of sugar, put on fire. Stirring all the time, bring to a temperature of about 60 degrees Celsius. After that, we also transfer the yolks into a deep container and beat with a mixer. Without turning off the mixer, gently and gradually add butter. The result should be a smooth and soft cream.

Cake assembly

Now the most interesting part of making the Kremlin cake. We spread the first cake on the dish, on which we will serve the cake. The smooth side of the cake should be on the bottom. Lubricate the upper side with yolk cream. Gently place the next cake on top and spread the protein cream on it. And so, in turn, all 6 cakes. 5th cake should also be greased with lemon filling on top of the yolk cream.

The last, seventh cake should be hoisted with the smooth side up. And grease the whole cake with protein cream - both the top and the sides. Now you need to decorate the Kremlin cake, you can do it according to your own taste. For example, many housewives prefer to use chocolate chips or powdered sugar.

  • coconut - 1 pc.;
  • milk chocolate - 100 g;
  • walnut and hazelnuts - 50 g.

Coconut should be chopped, grate the flesh on a coarse grater. You can also buy ready-made coconut, but often it is too stiff. You also need to grate a chocolate bar and a walnut. Mix all the ingredients and sprinkle abundantly on the cake.
