It is infrequent, but it still happens that a duck gets into our kitchen. Usually it is baked in the oven as a whole. How is the duck cooked in the oven? Yes, almost the same as chicken.
The duck is cooked in the oven as follows: first, prepare the carcass - mine, wipe it with a paper towel. Mix a little salt with pepper and rub the carcass lightly with this mixture. Mix honey and mustard in equal proportions and coat the duck. Two kilograms of duck will take about two tablespoons of both.
Such a duck is baked in the oven in foil or sleeve. Carefully pour half a glass of boiled water, close our sleeve and put the duck in the oven. Bake at 200 degrees for just over an hour.
Stuffed duck in the oven is also one of the simplest and most common dishes. About 2 grams of onion, 300 grams of fresh mushrooms and 500 grams of potatoes are consumed per 2 kilograms of duck. All products, except duck, are finely cut. Onions are overcooked in a pan, then mushrooms are added to it and fried for about 5 minutes. Then diced potatoes are added and fried for another 10-12 minutes. Salt, pepper, you can add a little greens and garlic. We stuff the duck with the resulting filling, pin the abdomen with toothpicks and, making cuts in the carcass, stuff with garlic. Then we put the duck in the sleeve and put it in the oven. The duck is cooked in the oven for an hour and a half at the same temperature.
You can also prepare a duck according to another recipe, for example, a duck in the oven, baked in dough. You can buy the dough in the store, or you can knead it yourself. I took puff yeast, but almost any will do. We also prepare the duck - wash it, wipe it, rub it with a mixture of salt and pepper. Take three or four sour apples and cut them into eight slices. We stuff our duck with apples and sew it up. We cut the garlic into small slices, make small cuts in the carcass and stuff the bird.
Roll out the dough one or two centimeters thick, put the duck on the dough and pinch the edges. We spread the duck on a deep baking sheet, previously covered with baking paper, and put it in the oven. We bake at a temperature of one hundred ninety degrees and fifteen minutes, then reduce the temperature to one hundred and sixty degrees and bake it for another hour and a half.
Then we remove the duck from the oven and carefully remove the dough. After that, we lay the duck on the baking sheet again, pour a little fat and put it in the oven for twenty to thirty minutes to form a golden crust, and break the dough into pieces, put it on the dish and pour the remaining fat. The dough turns out - just a jumble!
Delicious and Christmas duck in the oven with rice and mushrooms. The duck cooked according to this recipe is juicy and aromatic. For such a stuffed duck weighing one and a half kilograms, you need to take: a third glass of rice, one onion, three hundred grams of mushrooms, four pieces of walnuts, a teaspoon of honey, five to six large spoons of soy sauce, vegetable oil, spices and spices. Saffron gives a very good taste.
If the duck was frozen, then after defrosting it must be scalded twice with boiling water so that the skin turns white, tightens and becomes more elastic.
