Buckwheat with meat - recipe

Buckwheat in the process of cooking increases in size by 4-5 times, acquiring a taste of the liquid in which it is cooked. Dressed with butter or milk, it is quite tasty, but on meat broth it is much more interesting. In addition, it is a cereal that β€œloves” fat, that is, it becomes more delicious when saturated with meat fats.

How to cook buckwheat with meat is not difficult to remember. Consider several cooking options.

First option

Buckwheat with meat, the recipe for which is presented below, is cooked in broth. A family of 3-5 people will need 250 grams. buckwheat, 300-350 gr. meat.

You can take any meat: fillet, loin, ribs, with or without a layer of fat. This can be pork, beef, lamb, goose, ducklings, chicken or any other. The fatter it is, the tastier the buckwheat will turn out.

Wash the meat, cut into pieces of medium size and put in a boil in 1 liter of water, be sure to salt. During the cooking process, it is necessary to remove the foam periodically, otherwise the broth will turn cloudy, with sediment. You can add the whole onion, 2-3 cloves of garlic and bay leaf to give an additional flavor.

While the meat is cooked, you can do the preparation of buckwheat. It should be sorted out from litter and unrefined or bad grains. Weed out fine pollen from crumbled seeds. Buckwheat is washed with running cold water. Then it should be placed in a pan and calcined as much as necessary so that the cereal becomes dark in color, similar to coffee beans. Annealed buckwheat does not boil, retains its shape even with stirring, the porridge is crumbly. Annealing can not be done if you like boiled porridge.

After the meat is completely ready, strain the broth through an iron sieve, having previously removed pieces of meat from it. Second option

Now the second option, which tells how to cook buckwheat with meat. Recipe with Stewed Stew. Most often, you can find stewed beef, pork or horse meat. Any of these will do. Pick the stew in glass jars to see the contents. A stew is considered good in which pieces of meat in jelly from the broth with a minimum amount of fat are visible. Third option

This is a special buckwheat with meat. The recipe is hardly more complicated, but the porridge will turn out tastier. We will need all those products that were needed in the first embodiment, but we must prepare the porridge in pots.

Make baking pots. Prepare the meat and fry it with a small amount of oil until golden brown. Put the meat on the bottom of the pots so that it takes 1/3 of the total volume. Pour over and over cooked buckwheat, approximately 50-70 gr.

Take onions and mushrooms, finely chop and fry separately, then cover them with the contents of the pot. Top up with water and cover. Instead of a lid, you can use a dough cake. Put in the oven for 1 hour at a moderate temperature.
