Festive canapes with herring for buffet and banquet

What is canapes? Sometimes this term means the type of reception - a stripped-down buffet table. If you were invited to a canapé evening, then count on a couple of light snacks, drinks, and cakes. Hot meals are not served at this reception. And in the strict sense of the word, canapes are a type of sandwiches. They must always be small so that you can send them to the mouth as a whole. Canapes at banquets are served as an aperitif - before a meal, and at receptions - along with cold snacks. Such sandwiches look very elegant. They are served at the festive table with some delicacy: caviar, foie gras, cervelat sausage, red fish ... We will learn how to make canapes with herring. Recipes for such snacks are very common in the cuisines of the northern peoples: Russians, Scandinavians, Danes, Germans. If we follow the instructions and act carefully, our sandwiches will turn out to be just a jumble!

For ten slices of rye bread, we need 200 g of salted herring fillet. First we cut the fish, remove all the bones from it. Then we cut it into longitudinal pieces no more than two centimeters long. In a cup with two soup spoons of vodka, dissolve a pinch of sugar and stir freshly ground black pepper there. Pour the pieces of herring with this liquid, cover with a film and send to the refrigerator for pickling. Three hours later, we begin to form canapes with herring. We take 100 g of oil softened to room temperature, mix it with finely chopped dill (for your taste, somewhere around half a bunch). In a dry frying pan, fry for 2-3 minutes a spoonful of coriander seeds, after which we knead the spice in a mortar and drive into aromatic oil. They smear slices of Borodino bread. We cut each into four parts. Wash the apple, cut into thin slices, sprinkle them so as not to “rust” with lemon juice. We put a piece of herring on bread and butter. We place an apple slice on it.

For this appetizer, the bread is cut into croutons, that is, the crust is gently cleaned from it with a grater. If desired, you can slightly dry the slices in a toaster or fry them like croutons in oil. We chop the herring of spicy salting and cut it into pieces according to the number of canapes. Lettuce onion (red, without bitterness) shred rings. We catch from the jar the required number of tiny gherkins. If not, cut into medium-sized slices of pickled cucumber. We form our canapes with herring. We put fish on bread without butter, onion ring on it, and a cucumber on top. We pierce the entire structure for stability with a skewer or a toothpick.

150 g fatty herring fillets need to be finely chopped (or scrolled through a meat grinder). Rub into it half the sour apple. Mix the mass with a mixer with one hundred grams of softened butter, chopped dill and a spoonful of mustard. Cut brown bread into small slices. Put a fish salad on them and decorate the canapes with herring with a leaf of parsley or a feather of green onion. If this variant of the sandwich seems too nondietic for you, replace the butter with the same amount of mayonnaise.

We make croutons from white toaster bread. While still hot, rub them with a chopped clove of garlic. Boil in a pan three tablespoons of tomato sauce with a pinch of red pepper. You can add to the paste and a clove of garlic, which rubbed bread. When the sauce has cooled, mix it with 50 grams of butter. Smear bread. On it we lay a thin circle of soft-boiled egg. Place a slice of chopped slightly salted herring on top. We fix the result with a skewer and send it to the refrigerator to soak for a quarter of an hour.
