Many people cannot imagine the lack of the aroma of fresh pastries during fasting, when you have to deny yourself the pleasure of trying the dough, because in most recipes there are foods prohibited during this period: eggs, butter, milk. But in this case, acceptable options for replacing animal products were found, so lean baking will be no less fragrant, tasty and healthy.
So one egg can be replaced with crushed flax seeds (one glass) mixed with water (three tablespoons). This mixture can be used to make pies and cookies. Milk is replaced with soy or chopped coconut pulp diluted with water. Instead of butter, use prune puree (half a glass of fruit and one third of a glass of water).
Thus, lean baking does not necessarily lose its taste, because you can always adapt any recipe to a lean table.
1. Pie "Monastic"
Ingredients: one cup of strong warm tea, seven tablespoons of flour, three tablespoons of vegetable oil, one hundred grams of sugar, three tablespoons of jam, one spoon of baking powder, nuts, spices and dried fruits to taste.
Of all these components, knead the dough, spread it on a baking sheet previously covered with parchment paper, and bake for twenty minutes in a well-heated oven.
2. Lean pastries with candied fruits
Ingredients: one and a half cups of flour, half a liter of orange juice, five hundred grams of a mixture of various dried fruits (dried apricots, prunes, nuts, raisins, etc.), two tablespoons of baking powder.
Dried fruits are poured with juice and left for twelve hours, after which they add baking powder, flour and mix well, put on a baking sheet, oiled, and bake for twenty-five minutes in a well-heated oven.
3. Greek pie
Ingredients: one glass of vegetable oil (olive), one and a half glasses of sugar, one and a half glasses of walnuts (chopped), one glass of raisins, four glasses of flour, two glasses of water, half a glass of liquor, cognac or wine, one spoonful of cinnamon and cloves, one zest lemon, as well as three spoons of baking powder.
This baking is prepared from dough without eggs, but thanks to nuts and dried fruits, it turns out to be satisfying.
So, flour, cloves, cinnamon and baking powder are mixed, oil is added and mixed. Then, water, sugar, cognac, nuts, raisins and zest are added to these products.
It should be said that raisins must first be poured with boiling water and left for ten minutes. Next, the dough is laid out in a mold and baked for one hour. Ready lean baking should cool (fifteen minutes), then it is cut into portions, sprinkled with nuts.
4. Onion turntables
Ingredients: five onions, one and a half tablespoons of dry yeast, two tablespoons of vegetable oil, one glass of water.
Cut the onion rings, salt and pepper, mix well. Yeast is dissolved in salted water, oil is added and a soft dough is kneaded. It is rolled up in the form of sausages and cut into pieces. Each such piece is rolled out, greased with vegetable oil, put onion stuffing in the middle and twisted into a tube, forming a horseshoe. The product is greased with strong tea and baked in the oven until cooked.
Thus, various pastries can be cooked during fasting, it may not work out of shortcrust pastry, since there is no butter in it, but there are many recipes that are suitable for such cases.
