History

Tsimlyansk champagne, before reaching readiness, very slowly wandered and stopped, not completely fermented. Sweet wine was poured into barrels and stored until March, until it was clarified. After that, it was bottled and corked. The throat of each bottle was tied with wire or twine and dipped in resin. Tsimlyansk champagne was stored standing in pits, which were specially torn out, where they placed bottles on top of each other, making layers of straw and earth. There it wandered a second time and stopped with the addition of sugar and carbon dioxide. Now, of course, champagne, wine, brandy are made using modern equipment that uses advanced technology.
