  • 200 g sour cream;
  • a few tablespoons of butter;
  • some flour (about 50 g);
  • pepper, salt, seasonings to taste.

How to cook flounder in the oven? Start by preparing the fish. Gut and clean it. Divide into portions. Rub them with salt, pepper a little. If you want, you can add seasoning. Take a refractory mold or stewpan. Lubricate with oil. Lay out the pieces of fish. Sprinkle a little oil and lemon on top. Cover the form with parchment, foil or a lid. Flounder in the oven should remain for about an hour. During this time, it should be periodically watered with the resulting juice, which will be collected at the bottom of the tank. Now prepare the fish sauce. Fry flour using butter. She should not be reddened. Pour in the sour cream gradually. Do not stop stirring the sauce. Put the right amount of salt, pepper. Put the mass in a water bath. The sauce should remain warm. As soon as the fish is baked, you need to remove the skin from it (you can not do this if you like fried skin). Tip

If you suddenly bought a Black Sea flounder, which has a characteristic taste and smell of iodine, then before cooking, it is recommended to soak it in milk for half an hour. Other flounders, Mediterranean and Atlantic, have a more pleasant taste. There is no need to soak them.

Baked flounder with tomatoes

To bake a flounder with tomatoes, you will need:

  • one flounder carcass weighing about 1 kg;
  • some ripe tomatoes;
  • lemon;
  • pepper, salt;
  • greens.

Cooking technology

Clean the carcass of the fish, you can cut it into portions, you can leave the whole. Rub the flounder with salt, pepper, and spices. Squeeze out the lemon juice and fill it with fish. Refrigerate for a couple of hours. Prepare the tomatoes - cut them into cubes. Chop greens. Take a non-stick container, lightly grease. Put the fish in it. Put tomatoes on top. Flounder in the oven should be baked for half an hour. Then sprinkle with herbs and serve.

This recipe will require the following ingredients:

  • flounder weighing about 1 kg;
  • a slice (per 100-150 g) of cheese;
  • 2 tomatoes;
  • a few spoons of sour cream;
  • lemon (zest and juice);
  • dill, salt, pepper.
