If you do not like pork, then it can easily be replaced with any other meat, for example, chicken, beef. You can also experiment with vegetables, change and supplement vegetables depending on your preferences.

Ingredients
What ingredients does the udon recipe with pork and vegetables require? To prepare the noodles we will need:
- 2 eggs;
- 220 g flour;
- a pinch of salt.
And:
- 300 g of pork;
- 200-250 g of carrots;
- 200-250 g of tomatoes;
- 200-250 g of bell pepper;
- 200-250 g zucchini;
- 150-200 g eggplant;
- 100-150 g of onion;
- 2 tbsp. l soy sauce;
- 1 tbsp. l sesame seeds;
- vegetable oil, spices and salt.
You can change the list of vegetables by replacing or adding your favorite ones to the dish, remove or add more, as we already said, this is a very flexible recipe, and udon noodles are combined with any vegetables and meat.
Noodles
We start cooking with noodles, the main ingredient in the dish. Of course, you can buy it in a store, but your own, home-made one, because it is so tasty, fragrant, you can add anything to its recipe. For example, spicy lovers will like the presence of pepper in a dish!
So, beat eggs in a deep bowl, add salt and beat them thoroughly. Sift flour, this is a mandatory part of the procedure if you decide to follow the classic udon recipe with pork and vegetables. Sifting the flour, you saturate it with oxygen due to which the noodles will turn out soft, it will be easy to cook.
First, pour 200 g of flour and stir, because of the different sizes of eggs, flour can refuse a lot or a little, you canโt go too far with it, so introduce the rest gradually, kneading the dough thoroughly.
Knead in a few minutes. As a result, you should get a tough dough that does not stick to your hands or bowl. Roll it out will be very difficult.
Put the finished dough in a bag and put it in the refrigerator.
Take vegetables and meat while the future noodles are resting in the refrigerator.
A few minutes before the frying is ready for udon, roll the dough into a long layer with a thickness of not more than 2 mm. If it sticks a little, sprinkle it with flour. Then roll the dough into a roll and cut into long strips.

Vegetables
Peel, chop, or grate the carrots in small strips, in Korean. To prepare udon with pork and vegetables, you need thinly chopped onions. Peel it and chop it into thin half rings. For the brightness of the dish, take the pepper of several colors. Peel it from seeds and chop into small strips. Grind tomatoes, eggplant and zucchini in the same way.
Fry vegetables properly so that they do not crunch but become soft. As a rule, this will take several minutes. In the same pan in which the meat was fried, put the carrots and fry. Separate the onions to a transparent state. Fry pepper, zucchini and eggplant in turn. Put tomatoes in the pan last. Combine all the vegetables with the meat, cover all the ingredients and simmer for 5-7 minutes.
