Oven stuffed chicken .

To prepare it you will need:

- whole chicken carcass weighing about 1.5 kg;

- rice - 200g;

- carrots - 150g;

- onion - 150g;

- mayonnaise - 50g;

- spices - 1 table. spoon to taste

- dried fruits (raisins, prunes, etc.) - optionally, you can not add.

Preparing chicken stuffed with rice in the oven as follows: rice needs to be boiled until half cooked. Finely chop the onion, grate the carrots on a fine grater and fry them in vegetable oil. Next, combine rice and frying, add spices and dried fruits. The filling is ready. Now we take directly for the chicken itself: we put it with its back up and cut along the ridge. This is necessary in order to remove the bones of the breast. Removing the bones of the breast will free up additional “space” for the filling. When the bones are removed, the incision is stitched with thick coarse threads to the very neck of the carcass. Through the neck we stuff the chicken with the prepared rice and ram it tightly, after which we sew up the carcass completely, including the neck. The joints on which the wings and legs are attached can be carefully broken in advance so that later the chicken can be cut without much effort. Now coat the carcass with mayonnaise and spices and place it in an oven preheated to 180 degrees for one hour. When the chicken stuffed with rice in the oven is ready, you can serve it to the table. Remember to remove the thread.

Recipe 2

Oven in chicken with mushrooms .

Absolutely any mushrooms are suitable for this recipe, but we will take the most affordable ones - champignons. So we need:

- whole chicken - 1 piece;

- fresh mushrooms (champignons) - 400g;

- sweet pepper - 1 piece;

- onion - 1 piece;

- salt with pepper, spices, herbs, spices - to taste.

In order for the chicken with mushrooms in the oven to turn out to be the most tender and delicious, it is necessary to remove all bones from it, including the ridge and ribs. Also remove bones from the wings and legs. Knead the resulting fillet well and rub it with salt, black pepper and the spices you have chosen. Now we put off the chicken for a while to give it a good soak, and set about preparing the filling. Wash and clean the mushrooms and onions, then cut: mushrooms into thin slices, onions into rings. In sunflower oil, fry them and add a little salt and pepper. Sweet pepper is cut into two halves along, remove the seeds and pour boiling water for a couple of minutes, then remove the skin from it. Stuffed chicken fillet stuffed as follows: first, spread the inside of sweet pepper, and on top of it - mushrooms. We also ram the wings and legs with mushrooms. Sew the carcass with thread, then coat it with mayonnaise, vegetable oil or a special sauce and place on a baking sheet. Preheat the oven to 200 degrees and place a baking sheet with chicken in it. Do not forget to periodically water the chicken with the juice released from it. After about 40 minutes, the chicken stuffed in the oven, completely covered with a golden crust, will be ready.

For lovers of chicken offal (liver, hearts, navels, ventricles), it is recommended to prepare the following filling: 200 g of chicken liver, 300 g of champignons and 1 head of onion finely chopped, grate half the carrots on a coarse grater. Heat vegetable oil in a large skillet and put onions in it. Slightly darken it until an onion smell appears, after which add grated carrots, mushrooms and liver to it. Stir all this well and simmer, fry over medium heat for about 10 minutes. Stir occasionally. At the very end, salt and pepper. The filling is ready, now it remains to fill it with chicken, which is then baked in the oven until tender.
