We are used to the fact that grapes are used, as a rule, for the preparation of various drinks - juices, compotes and, of course, wine. However, few people thought that its berries can be harvested in the same way as all other sweet fruits. Moreover, grapes make a delicious and very delicate jam. For this, it is best to use seedless varieties so that they do not come across during meals and do not interfere with enjoying the taste of berry treats. That is why we will learn to cook jam from raisins of grapes - white or black, at your discretion. The latter taste is more pronounced, saturated, and the former - the color of the finished product is more beautiful, and the taste is more tender.
In order not to make a choice what color to cook jam from grapes, the recipe will be not one, but two. Let's start with the white raisins. Per kilogram of berries, we need such a number of the following components:
- water - 100 ml;
- sugar - 800 grams;
- lemon - one piece (large);
- a small cinnamon stick and three buds of cloves (for flavor).
Jam from grapes begins to prepare jam with syrup. To do this, pour sugar into a saucepan, add water, squeeze the juice of a lemon, throw spices. Bring the mixture to a boil and cook until the sugar is completely dissolved. Now you have to work hard with berries. They need to be removed from the branches, washed thoroughly, dried and pricked with a thick needle in one or two places. This is necessary so that they remain intact and do not burst. If the form and appearance are not too important for you, then with this procedure you can not bother.
Dip grape berries in syrup and over low heat, heat them to 70 degrees. Remove from the stove and cool, then heat again - so during the day. The grapes should be completely saturated with syrup, but not boil (therefore, you need to mix carefully, and do not raise the temperature much). During the last cooking, you need to bring the syrup to a boil, then reduce the heat and boil for about 5 minutes. The finished jam made from grape raisins (white) will have a very beautiful amber-honey color. Pour it into banks and roll it up.
The second recipe will be a little different, and we will use dark grapes already. To do this, we need (per kilo of berries):
- sugar - kilogram;
- water - 1.5 cups;
- lemon - half;
- vanillin - half a teaspoon.
Berries are also washed and dried. Then we blanch in boiling water for about a minute and immediately transfer it to a container with cold water. Cook the syrup from the specified amount of sugar and water. Dip the berries in it and bring to a boil. After which they need to be boiled for 5 minutes, take a break for 6 hours (to insist) and boil again - for 10 minutes. The next break will last 8 hours and then the final stage of cooking will be examined (until ready). Shortly before turning off the fire, add lemon juice and vanilla, mix thoroughly. Jam from grape raisins (dark) is ready. Lay it in prepared jars and close.
