You will need:

  • fish fillet - 400-500 g;
  • tomato juice - 1 cup;
  • onion - 2 pcs.;
  • carrots - 2 pcs.;
  • salt;
  • juice of the 1st lemon;
  • pepper.

Now more about the cooking method. Peel the onions and chop them into rings. Take a frying pan with high sides, which you can then put in the oven. Put it on fire. After heating the pan, pour oil into it and dip the onion there. Reduce heat and let the onions stew for 7 minutes. Peel the carrots and grate it. When the onion becomes completely transparent, add the carrots to the pan, stir and cover. Leave to simmer another 5 minutes over low heat.

Rinse the fillet and dry well during this time. Slice it into portions. Sprinkle each piece of lemon juice. This will help get rid of an unpleasant odor that many do not like. Pepper and salt each piece on both sides.

Remove the pan from the heat. Set aside half the vegetables on a plate. Spread the other half evenly over the surface of the pan. Next, put pieces of fish fillet in it. Oven-baked fish stuffed with vegetables

For this dish you can use any fish of your choice. It can be cod, mackerel and even pike. In order for the fish and vegetables to succeed, you will need the following ingredients:

  • fish without giblets and head - 1 pc.;
  • carrots - 1 pc.;
  • green celery stalk - 1 pc.;
  • non-hot pepper - 1 pc.;
  • cheese - 100 g;
  • sunflower oil - 3 tbsp. spoons;
  • onions - 1 pc.;
  • juice of the 1st lemon;
  • pepper, salt and other seasonings to taste.

Peel the onions and carrots. Chop the onion finely. Rub carrots on a coarse grater. Heat the pan and pour oil into it. Send the onion there, simmer it over low heat for about 5 minutes and immediately add the grated carrots. While the vegetables are stewed, chop the bell pepper and celery into small pieces, about 1 cm. Add them to the mixture of onions and carrots. Salt, pepper and add your favorite spices. Sauté the vegetables over low heat under a lid until they are tender.

Notch the abdomen of the fish, grab the bone and try to pull it out, starting from the tail. Remove other visible bones. Spread a sheet of foil on a baking sheet that is much larger than its surface. Lubricate the foil with vegetable oil so that the fish does not stick and can be easily removed after cooking. Put the fish on the foil, rub it with lemon juice, pepper well and salt.

Stuff her belly with stewed vegetables. If the whole filling does not fit, lay it on top. Wrap the foil tightly. Now you need to send the fish to a preheated oven at a temperature of approximately 180-200 ° C for 30 minutes. Then remove the fish from the oven and carefully cut and slightly unfold the foil.
