Mexican tortilla with various toppings firmly entered the life of modern Russians along with such fast food dishes as shawarma or a hamburger. We are no longer surprised by exotic tartilla, tacos or fajitos. To create a Mexican-style dinner, no special culinary skills are required. In this article, we will tell you how to cook tortilla at home. You will also learn how to make real burritos, enchilados and tacos on your own from simple products.

Mexican cuisine is known worldwide for its traditional appetizers, which are very tasty and easy to perform. Most of them are fresh corn tortillas with various sauces and various fillings. A tortilla cake is prepared very simply:

  • Combine three cups of wheat flour, a bag of baking powder and a little salt in a large bowl. Grind two tablespoons of butter with a knife or grate. Grind all the ingredients with your hands until they turn into crumbs.
  • One and a half cups of hot water gradually add to the flour. Knead the soft dough and divide it into pieces equal in size to the chicken egg. Cover the blanks with a towel and let them rest for about 15 minutes.
  • Sprinkle flour on the table top and roll thin pancakes from the prepared dough. The Mexican tortilla is baked in a hot frying pan without oil until its surface is browned and covered with bubbles.

To cook corn tortillas, take wheat and corn flour in a 1: 1 ratio. Finished Mexican tortilla can be stored in a freezer for a long time if wrapped in parchment or cling film. To use the tortilla, you just need to defrost it at room temperature and then heat it in the microwave.

This wonderful dish can replace a full meal, and it is very simple to prepare:

  • Chicken breast cut into small cubes and fry in a pan until cooked. Remember to season it with salt and pepper.
  • We will make tortilla sauce from sour cream, chopped garlic and ground chili.
  • Cut the tomatoes into circles, and the cucumbers into strips.
  • Lubricate with warmed tortilla sauce, put a couple of lettuce, vegetables, tomato paste and chicken on it.
  • Fold the cake with an envelope, so that the filling does not crumble, wrap the envelope in foil.

Burrito with spicy sauce

This versatile dish can be prepared with any meat, fish or vegetable filling. This time we suggest you make burrito with ground beef:

  • The most important component of this dish, of course, is tortilla. At home, these cakes can be prepared from flour and water as described above. If you do not want to bake, you can buy ready-made ones and use them as a basis for burritos.
  • Fry 500 grams of minced meat in vegetable oil until half cooked.
  • Peel one onion, chop it and put in the pan to the meat. When it is browned, add diced bell pepper, chopped chili (to taste) and canned beans.
  • Salt the vegetables and drizzle with lime juice.
  • Put the filling in the center of the tortilla and wrap it in a straw.

If desired, you can change the number of components, add other vegetables or sauce.

Enchiladas

Like many other Mexican dishes, enchiladas consists of fresh cakes, meat and vegetable fillings, and salsa (a special sauce).

  • Cut half of the red onion into a small cube, and grate the carrots. Sauté vegetables in vegetable oil.
  • Divide boiled chicken breast (or grilled chicken) into fibers and fry with vegetables for several minutes.
  • Put the filling on the heated tortillas and wrap them in tubes.
  • When all the tubes are ready, they should be fried in oil or reheated in a microwave.
  • Pour green salsa into shallow plates, lay a few tubes in a row on it. Top the enchilados with sour cream and sprinkle with grated cheese.

Tacos

Freshly baked Mexican tortilla with meat filling has such a bright taste that the tongue does not dare to call it fast food. Natural products in combination with fresh vegetables and herbs can not be compared to buns, sausages and sauces of unknown origin. It’s very easy to cook this wonderful dish:

  • Peel one onion, cut into strips, and marinate in one tablespoon of vinegar.
  • Grind a bunch of parsley, mix with onions, a spoonful of sugar, salt and black pepper.
  • Pass 300 grams of veal tenderloin through a meat grinder and fry in a pan for several minutes.
  • Grind sweet red pepper and large tomato, and then transfer to meat and simmer all together under the lid until cooked. Do not forget to salt the filling and season it with chili pepper.
  • When the meat has cooled, put it on a tortilla, sprinkle with onion and pour hot sauce. Bend the cake in half so that the filling is evenly distributed, then serve.

Quesadilla

This is another popular Mexican dish made with tortilla, meat, vegetables and cheese:

  • Dice the chicken fillet and fry in a pan until half cooked.
  • Cut onions, tomatoes and sweet peppers into a cube and stew with chicken.
  • Add canned corn, tomato paste, salt and pepper to the pan to taste.
  • Grate hard cheese on a coarse grater and put on one half of the tortilla. Put the filling on top, and then another layer of grated cheese. Fold the cake in half, cut into two and fry in a preheated pan on both sides.

According to the classic recipe, the beef that will be used for this dish must be pickled in a special way for two or three days. However, we suggest you take advantage of a simpler option for preparing this hearty snack:

  • Cut 500 grams of beef tenderloin into steaks, each of which grate with salt and black pepper. Cook the prepared meat in salted water for about 20 minutes.
  • When the meat has cooled, cut it into thin and long fibers.
  • Three red onions and four bell peppers cut into long strips.
  • Heat the pan well and fry the meat on it, generously sprinkled with ground pepper. Then you can add vegetables and heat them together with beef.

To form fajitos, you need to independently each participant in the meal. To do this, take a tortilla in your hand, put the filling in it, sprinkle with grated cheese, pour sour cream and salsa to taste.
