Incredibly popular dish in the Middle Kingdom are Chinese cakes with green onions (tsun yubin). They are prepared everywhere: in restaurants, on the street, at home.

At catering outlets in China, you will never find bread. Restaurants usually offer fried dumplings made from unleavened dough or Chinese flatbread cakes with green onions. They are very aromatic and slightly salty in taste. In addition to green onions, other ingredients can be added: boiled egg, sesame seed, fresh dill.

While the dough is resting, start cooking the toppings. Put finely chopped green onions in a bowl, add ground pepper and melted fat to it. Mix well.

Roll out a large, but very thin pancake from the dough. We cover it with plenty of green filling and turn the sausage. We turn the sausage (roll) into a "snail", which we then roll out and turn into a Chinese flat cake with green onions. The thinner the tortilla, the faster it will be fried and the tastier and crust will be.

Cakes are fried in a wok or ordinary pan with high sides and a lot of vegetable oil. Someone prefers to bring the dish to a crispy golden crust, but according to the traditional Chinese recipe, the tortillas should be soft and only crunch slightly. We put the finished ones on paper towels to remove excess fat. Serve hot, cut into small pieces.

If you do not have a large pan, you can make Chinese puff cakes with green onions small. They will be similar to our usual fritters. In this case, after the tortilla sprinkled with herbs was rolled into a roll, it is not necessary to form a β€œsnail”, but simply cut it into pieces.
