Khachapuri Cooking Recipe

Ingredients: eggs - 6 pcs, flour - kg, suluguni cheese - 1.2 kg, sunflower oil - 2 tablespoons, butter - 100 g, sugar - a tablespoon, dry yeast - a tablespoon, salt.

Cooking method:

On a coarse grater, rub cheese and 4 boiled eggs, mix and salt to taste. Then in a separate dish we prepare the dough for khachapuri, namely we break 2 eggs, add sugar, salt and beat with a spoon until a homogeneous mass is obtained. Sift flour through a sieve and gradually fall asleep in a dish, stirring constantly. Then add yeast diluted in warm water. When the dough is ready, it must be put for 1 hour in a warm place so that it rises. After that, you need to knead it again and put it in a warm place for 30 minutes.

After the dough has come up, we divide it into 10 parts and roll it into cakes using a rolling pin. We spread cheese into cakes so that about 4 cm. Cakes from the edge remain unoccupied. Turn the edges up and give the khachapuri the shape of a boat. Then grease them on top with butter and bake them at a temperature of 200 degrees for about 40-45 minutes. While the khachapuri is baked, you can put a teapot, khachapuri with tea - it is very tasty.

Khachapuri with feta cheese

Ingredients: 500 grams of feta cheese, flour, 3 eggs, a glass of yogurt, ΒΌ teaspoon of salt, 100 grams of sunflower oil, 30 grams of butter.

Cooking method:

Cut the feta cheese into slices about a centimeter thick and put it in a saucepan with cold water for 3 hours in order for the salt to come out. After this, pour the cheese into a colander and squeeze. Beat butter and eggs, mix with feta cheese and crush until smooth. Roll up balls the size of a fist from it and leave for 2 hours.

Pour the flour into the dish, add 2 eggs and salt, mix, gradually pouring the curdled milk until a homogeneous mass is obtained. After this, we divide the dough into 4 parts and roll out each part using a rolling pin. Lubricate them with butter, fold in fours and roll out again. Lubricate again with butter and fold in half. Then we lay the resulting filling between the layers, after which we close the edges.

We heat the sunflower oil in a cast-iron frying pan, put the khachapuri with the seam down and begin to bake over low heat. After about 10 minutes, the lower part will turn red. After this, khachapuri should be turned over, greased with a mixture of eggs and butter. When the khachapuri is ready, take it out of the oven and grease with butter.

Khachapuri recipe with puff pastry

Ingredients: cheese (preferably suluguni), sausage, puff pastry, greens (urop, parsley, cilantro).

Cooking method:

We roll out the salt dough with a rolling pin in one direction. Cut it into several pieces. Cut the sausage into small slices and rub the cheese on a coarse grater. Finely chop the greens. First spread the cheese between the layers, and finely chopped sausage and greens on top. You can add some salt. The edges of the dough are closed and laid on a baking sheet in the oven. Bake at 180 degrees for about 20 minutes.

Yeast dough Khachapuri

Ingredients: 2 eggs, yeast dough (200 gr), suluguni cheese (100 gr), butter (20 gr), dill and parsley.

Cooking method:

Boil the hard-boiled egg, and then clear it from the shell. On a coarse grater we rub cheese and a boiled egg. Finely chop the greens and mix it with the egg and cheese. Add salt to taste. Then we divide the yeast dough into 2 parts, and then roll them out using a rolling pin. We spread the filling we have on both cakes. At the same time, retreating about a centimeter from the edge, so that they can be wrapped. We give the cakes the shape of a boat, wrapping the edges and inside, on the filling, put a little butter. After that, grease future khachapuri with a raw egg and bake until cooked in the oven at a temperature of 200 degrees.
