Surimi ... What does this word mean? In the literal translation from Japanese it is minced meat, and from Chinese - fish puree. Surimi is the basis for the preparation of products that simulate the meat of lobster, crab and other marine life. At the same time, spices and dyes are added to it.
Surimi ... What does this puree contain in its composition? Its production uses freshly caught ocean fish. Varieties that are suitable for surimi should have white meat. In addition, a minimum amount of fat and high density are a prerequisite. Surimi mince is produced, as a rule, from fish of cod species. These include blue whiting and pollock, hake and cod. Sometimes herring and horse mackerel, sardines and Iwashi are also used. However, from these varieties of surimi, less quality is obtained. It has low bile-forming properties and a darker color.
In order to make surimi, manufacturers use only fish fillets. Bone meal is produced from the head, bones, and skin.
Surimi production - what is this process? At the first stage, fillet is separated from fish caught at least six to ten hours ago. After this, the obtained raw material is ground to the state of minced meat and washed several times in cold clean water. As a result of this operation, only insoluble proteins remain. At its core, this product is already surimi. It is additionally placed in a centrifuge to remove excess moisture. At the final stage, ten-kilogram blocks are formed from the protein mass, which undergo a quick freezing procedure.
