Lean Cabbage Cutlets

Here's how, for example, a dinner will pass without the presence of cutlets, they are also made of meat. However, there are recipes for making such a dish from vegetables, including from ordinary cabbage itself!

Cabbage - a vegetable is very healthy and rich in vitamins. White cabbage is famous for its long shelf life and does not lose its beneficial properties all year round.

Lean cabbage cutlets are popular in vegetarian cuisine no less than carrot or beetroot. This dish is served on the table both as an original side dish and as an independent dish. The presence of a delicious golden crust on such patties will surely seduce you. They are suitable for both afternoon tea and a light dinner. And to give them piquancy, you can rub an apple into minced meat.

The dish is cooked quickly and easily. Lenten cabbage recipes with greens will turn out even more tender if you select non-hard cabbage for their preparation. However, if there is no choice, then you just need to boil the cabbage a little or just hold it in boiling water to soften.

To prepare lean cabbage cutlets you will need:

- 1 kg of white cabbage;

-2 cloves of garlic;

- 1 head of onion;

- 0.5 tbsp. flour;

- 0.5 tbsp. semolina;

- 1 bunch of greenery;

- 150 g breadcrumbs;

- 100 g of vegetable oil (for frying);

- salt.

Cabbage, previously boiled for about ten minutes in salted water, is passed through a meat grinder. Squeeze in order to drain the excess juice. Add chopped garlic, chopped onion and herbs to the cabbage minced meat. Next, attach semolina, flour, salt and mix thoroughly to the resulting mass.

We form cutlets from the obtained minced meat, sprinkle them with breadcrumbs and fry until a golden crust appears on both sides.

And how to make cabbage cutlets more satisfying? Very simple. One more ingredient should be added to them - potatoes. The taste will remain equally incomparable, and the calorie content will increase.

Lean cabbage cutlets with potatoes will appeal to both adults and those children who do not favor vegetables.

To prepare 6 servings you need to prepare:

- 1 head of onion;

- 400 g of sauerkraut;

- 0.5 kg of potatoes;

- 150 g flour for breading;

- 70 g of vegetable oil;

- salt pepper.

Peel the potatoes, cut into slices, boil in salted water until tender and knead to a puree state. Squash the sauerkraut from excess fluid, chop and fry for about five minutes. Add finely chopped onions, cabbage, then pepper, salt to the finished mashed potatoes and mix. From the resulting vegetable mass, we begin to form cutlets, which are then rolled in flour and quickly fry on each side. A salad made of fresh vegetables is very suitable for the finished dish. And when there is no fasting, lean cabbage cutlets are very tasty with sour cream.

To make this dish diet, cook cabbage cutlets in the oven.

You will need:

- 0.5 kg of white cabbage;

- 250 ml of milk;

- 50 g of semolina;

- 50 g butter;

- 1 egg;

- 60 g of flour;

- salt.

We divide the cabbage into leaves and cook in salted water for about ten minutes until softened. After the cabbage leaves have cooled, grind them in a blender or meat grinder. Next, in a pan with melted butter, lay out a well-mixed mixture of cabbage minced with semolina milk, simmer for about five minutes. Let the cabbage mass cool, drive eggs into it, salt, pepper to taste and mix well. We form cutlets from the obtained minced meat and roll them in flour. We cover the baking sheet with parchment, on which we spread the cabbage cutlets. They are baked quite quickly, in just twenty minutes. A couple of minutes before cooking, grease the patties with egg yolk. Serve the finished dish warm with sour cream.
