There are several ways to harvest tomatoes for the winter. Each of them is good in its own way. Some people like pickled tomatoes to make them taste like barrel vegetables. Many people like sweet tomatoes, which are great as a snack for any table. But in this article weβll talk about how to make tomatoes in your own juice. Subsequently, they can replace tomato paste, suitable for cooking borscht or pizza.

There are two ways to make tomatoes in your own juice. In the first case, peel is cleaned, and in the second, whole tomatoes are harvested. If you do not remove the skin, then the vegetables are stronger and better stored in brine. But itβs more convenient to use tomatoes without skins. So how to make tomatoes in your own juice? We take 200 grams of sugar, three liters of tomato juice, 50 grams of salt, tomatoes, a few grains of allspice and cloves, a small spoon of vinegar (70%) and three cloves of chopped garlic. We wash and sort tomatoes. We leave whole and dense for preservation, and from soft and rumpled make tomato juice. Selected tomatoes are pricked at the base of the stalk with a toothpick in several places. We prepare jars for salting in advance.
We put tomatoes in them. Pour the cooked tomato juice into a container and put on the stove. When the pouring boils, add salt, sugar, pepper and cloves to it. Cook
tomato juice for about 30 minutes. Lastly, put chopped garlic. Pour the tomatoes in jars with filling and close the lids, but do not roll up. We sterilize the prepared preservation for about 20 minutes, and then roll tightly. Leave the tomatoes to cool, and then move them to a cold place.
Preservation - a thin thing
You can cook the slices in your own juice. To do this, take strong fruits for preservation (2 kilograms) and overripe fruits for tomato (2 kilograms). You will also need two large tablespoons of sugar, two large tablespoons of salt, a few leaves of parsley and pepper to taste. We wash and cut the tomatoes with medium-sized rings. Then put them in prepared jars. From soft fruits we make tomato juice. Twist them through a meat grinder or wipe through a sieve, pre-steaming in a pan. You can also use a blender. Choose any method you like. In the prepared tomato juice, add granulated sugar, coarse salt and all the spices and wait until it boils.
Then fill them with jars of vegetables. Do not close the lids tightly, because we sterilize for 25 minutes. Then thoroughly close the banks, turn and wrap. Store chopped tomatoes in their own juice in a cool place. In winter, they will be a great snack on the tables.
Some tips
And how to make tomatoes in their own juice without skins? They need to be blanched. To do this, we cut them crosswise, dip the vegetables in boiling water for 2-3 minutes and immediately transfer to ice water. After such manipulation, the skin is easily removed. Spices can be added as you wish. The main thing is that they do not greatly interrupt the natural taste of tomatoes.
