Kurze with cottage cheese is prepared as follows:

  1. Dill seeds are ground in a coffee grinder and added to the curd. Then chop the onion and fry until golden brown. Next beat eggs (3 pieces). Dill (fresh) is finely chopped and also added to the curd, to taste it is salted and pepper. Then everything should be mixed well.
  2. After that, they begin to knead the dough from flour, eggs, salt and water, in accordance with the recipe. The finished dough should be given a little rest.
  3. Then it is divided into two parts. One of them is rolled into a round-shaped layer, from which circles are cut using a mold.
  4. On each resulting circle put a little filling (1 tsp), after which a braid is twisted around the edges.
  5. Next, put the pot of water on the fire and after the water begins to boil, add salt and put the stuck kurze with cottage cheese in boiling water. Once they pop up, the items can be considered finished.

They should be pulled out into a large plate and greased with oil. Products are served by pouring sour cream on them. If there are too many products, half can not be cooked, but frozen in the refrigerator until next time.

Act as follows:

  1. Make lean dough (cool), knead for 10 minutes. The result should be enough bun of dense consistency. It is covered with a napkin and set aside.
  2. The filling should be sufficiently liquid. This is necessary so that it can literally be infused with 2 tsp. in every kurze. First, chopped onion heads and garlic cloves are fried in butter, then green onions (one bunch) are added to them, mixed and removed from the heat. Then the mass is added to the curd. Then eggs are driven into the cottage cheese, seasoned and mixed thoroughly.
  3. A sausage is formed from the dough, which is cut into 7 parts.
  4. The first ball is rolled into a cake up to 2 mm thick and the size of a saucer. The remaining pieces should be hidden under a lid or in a bag so that they do not weave.
  5. The rolled cake is halved, each half is also folded in half. Tightly pinch from one edge and sculpt a "rope" or "pigtail". The resulting triangle is filled with a semi-liquid filling, pinch from the second edge and again make a “pigtail” (“rope”).
  6. The molded products are dipped in boiling water (salted) in batches, making sure that they do not stick to the bottom. Cook until cooked over medium heat (as a result, the kurze should not lose shape, but only slightly increase).
