Controversy often flares up among forum participants: can this dish be considered dumplings? One of the culinary portals even published a crossword puzzle, among others containing a question: what are the names of dumplings with cottage cheese? (The answer should be an eight-letter word beginning with "B"). It is easy to guess that the compilers do not see the difference between the two dishes. Meanwhile, it exists. What is the difference between dumplings and dumplings? How to cook dumplings with cottage cheese? What are some famous delicacy recipes? We will try to answer these questions in our article.

These dishes, which are widespread in Russian cuisine, are very similar in many respects, they are even considered as close relatives, but still there are some differences between dumplings and dumplings.

  • The proportions of dough and minced meat in these dishes are also different. In dumplings, these ingredients are used in a 1: 1 combination, while in the dumplings, more fillings are placed. The very consistency of the dough for dumplings should be tighter and roll it thinner than dumplings.
  • The size of dumplings is always quite small (about 2-3 cm). Dumplings can often reach impressive size (from 8 cm). In some regions, traditionally they are quite large products that can be satiated by eating 1-2 pieces.
  • These dishes also differ in their form. According to tradition, dumplings are molded in the form of a crescent. A pigtail is sometimes made around the edge for beauty. Unlike dumplings, dumplings are usually made round. But I must say that recently this criterion has not been determining.

What are the similarities?

The dough, both for dumplings and for dumplings, should be quite steep. Stuffing should also mix well. To give elasticity, a small amount of oil is sometimes added to the dough. In the process of kneading, cooks often try to stretch the dough, then fold it, so that, as it should, gluten develops. Act as follows:

  1. Salt water, mix it with vegetable oil, sift flour into it and knead the dough. They wrap it in film and send it to the refrigerator to β€œrest” for half an hour.
  2. Meanwhile, prepare the filling. Cottage cheese with chicken yolks is kneaded in a bowl. Butter (cream) is grated and added to the curd mass, salt, sugar is added, after which the composition is thoroughly mixed.
  3. Then, small pieces are nibbled off the filling and balls are formed from them the size of a 5-kopek coin.
  4. The "rested" dough is taken out of the refrigerator and rolled into a thin layer (up to 2 mm thick). Using a round shape, circles are cut out. Fold all the blanks on the table and cover with a towel to prevent the dough from drying out.
  5. Then begin to sculpt dumplings with cottage cheese. Each of the circles should be slightly stretched, put the filling (formed balls) in the center and pinch it from all sides. Products are laid out on a table previously sprinkled with flour.

  • one egg;
  • 2 tbsp. l sour cream (oily);
  • 2 tbsp. l white granulated sugar;
  • a pinch of salt (sea).

Description of preparation

Our grandmothers knead the dough for the preparation of dumplings with cottage cheese with this addition of eggs. Modern housewives sometimes forget about it. The products created by the method described in the recipe turn out to be surprisingly gentle, truly melt in the mouth.

They act like this: sift flour, add eggs, salt and slowly pour water, after which they knead a cool dough. Water must always be very cold, really icy. The hostess chooses its quantity to her taste, depending on the consistency of the resulting test.

Next, make the filling:

  1. Cottage cheese is mixed with other ingredients, after which the mass is ground to a state of elasticity.
  2. The dough is rolled into a thin layer, circles are cut out of it (using a cup or an ordinary faceted glass).
  3. On each of the circles in the middle put the filling, pinch the edges and form dumplings. The edges are fixed tightly enough so that during cooking the products do not boil and the filling does not flow from them.

Many people like unsweetened dumplings with cottage cheese. The recipe (see the filling photo above), according to which you can cook this peculiar and unusually juicy dish, is presented further in the section. Ingredients:

  • 380 g of flour (wheat);
  • 1-2 eggs;
  • 140 ml of water;
  • 1 gram of salt;
  • 500 g of onion (green);
  • two boiled eggs;
  • 400 g of cottage cheese;
  • 1-2 eggs (raw);
  • 25 g butter;
  • salt to taste;
  • 125 g sour cream (for serving).

Cooking

Act as follows:

  • 1 Sift flour into a bowl. Add eggs and water, salt and knead a fairly steep dough. Cover it with a napkin and let stand for about half an hour to make the dough elastic.
  • 2 Meanwhile, prepare the filling. Chop onion (green) and mix it with boiled eggs (chopped). The cottage cheese is rubbed through a sieve and mixed with an egg (raw). Then all the ingredients are thoroughly mixed. Add butter (melted), salt and mix well again.
  • 3 Cut the dough into pieces, roll each of them into a thin layer. Spread the filling in the center of each workpiece and pinch the edges, forming the product.
  • 4 Dumplings are boiled in boiling water (salted) for 5-7 minutes.

The finished dish is poured with butter (melted) or sour cream and immediately served on the table.

Green curd dumplings (with garlic)

Use:

  • 300 g of wheat flour (premium);
  • 90 ml of water;
  • one egg;
  • 100 g of cottage cheese;
  • 4g of garlic;
  • to taste: salt, parsley, pepper.
Stuffing with onions.

Prepare like this:

  • In a suitable dish, one egg (fresh), water, salt and flour (sifted) are mixed. After that, knead the elastic dough, cover the bowl with cling film and leave it to β€œripen”.
  • After 1 hour, cottage cheese is combined in a plate with a pinch of salt, allspice, parsley (shredded) and garlic (finely grated).
  • Then the present dough is kneaded again, rolled out using a rolling pin (wooden) into a thin layer and even circles are cut out of it with a glass or a wide glass. Fragrant curd mass is placed in the middle of each of the blanks and carefully pinch the edges, forming a classic dumpling.
  • 4 Boil the blanks in boiling water for about seven minutes and immediately lay them on a plate. The finished dish is complemented with ketchup or any other sauce. Fresh vegetables will be an ideal decoration for dumplings with cottage cheese.

To prepare the test, use:

  • flour (2.5 cups);
  • eggs - 2 pcs.;
  • water (0.5 cups);
  • salt (one pinch).

  • 300 grams of cottage cheese;
  • one yolk;
  • 1 tsp a spoonful of salt;
  • fried onions (to taste).

To prepare the sprinkle you will need:

  • one onion;
  • butter (1 tbsp. l.)

Act as follows:

  • 1 In milk (cold) beat the egg and salt. Pour flour and knead a thick, cool dough. Then it is rolled out (very thinly), circles are cut out with a cup and smeared with protein (whipped).
  • 2 On each of the circles put the curd filling (1 teaspoon each), mixed with yolk and chopped and fried onion in butter and salted, connect the edges and pinch.
  • 3 After that, dumplings are dipped in boiling water (salted) and boiled for 10 minutes.

Often this popular treat, which can be considered a real find for those who do not have a large margin of time and patience, is called dumplings. Indeed, there is no fundamental difference in the preparation of these related dishes, so those who like to call dumplings a treat can simply make them small in size, and lovers of dumplings can sculpt larger items. You will need a set of products:

  • cottage cheese (400 g);
  • wheat flour (1 cup);
  • one egg (chicken);
  • sugar (2 tbsp. l.);
  • salt.
Cooking "lazy" dumplings.

Prepare like this:

  • In a roomy bowl, place the amount of cottage cheese corresponding to the recipe. Then the curd is crushed with a spoon (there should be no lumps). Sugar is added, salted, after which everything is mixed and triturated until smooth.
  • Then an egg is driven into the mixture and mixed again until a homogeneous curd is obtained.
  • Add wheat flour (previously sifted) to it and knead the dough (it should turn out elastic and not stick to the hands).
  • Next, the finished dough is divided into several parts, each of which is rolled into a narrow sausage.

Anyone who calls it dumplings makes products symbolically small, while lovers of dumplings fashion more products. Use:

It will take up to 10 -20 minutes to cook.

Technology

Cottage cheese is salted and mixed with egg and dill. You can add dill to the cottage cheese in advance - for better flavoring. Then add the flour in parts, knead the dough, which should not stick to the hands. Several sausages are shaken from it, which are cut into pieces. Then the resulting product is boiled in boiling salted water for about 5 minutes.
