Salmon ear is also called red or amber. It is prepared in the same way as traditional white - from strong broth and a small amount of vegetables.
A distinctive feature of any fish soup is a transparent broth, it is desirable to achieve this during the cooking process, avoiding rapid boiling. You need to cook over medium heat, but be sure to open the lid. Unlike white fish, salmon has a gentle and light taste and therefore does not require an abundance of spices - just put bay leaf and a few peas of pepper in the broth and crumble fresh greens into the prepared ear. Mandatory components of fish soup are potatoes and carrots, you do not need to put more vegetables. After the salmon ear is cooked, it should be infused for at least 15 minutes under the lid, and it is best to cover the pan with a large towel. If you want to bring the soup’s taste as close as possible to that obtained when cooking at the stake in the field, add a few drops of liquid smoke to the dish.
Classic salmon ear. Recipe
For one small carcass of salmon (you can take one 800 g of soup set and 400 g of salmon fillet) you will need: potatoes - 6 tubers, tomatoes - 2 pieces, salmon caviar - 50 g, one onion, butter - a small cube, parsley root - 2 pieces, one bay leaf, black pepper - 3-4 peas, fresh herbs, salt.
We clean the salmon carcass, wash and separate the fillet. In the boiling water we put the ridge, head, fins and cook for about half an hour. Filter the broth. Cut the potatoes into small slices, cut the carrots and parsley root into circles, put all the chopped vegetables, a whole onion and peas in a fish broth and cook for half an hour. Cut salmon fillet into portioned slices and add to vegetables. After 10 minutes, the salmon ear will be almost ready. A few minutes before the end of cooking, add oil, finely chopped skinless tomato and bay leaf. After removing from heat, cover with a lid and wait 10 minutes. Then add salmon caviar and fresh chopped greens.
Salmon is often bought in order to prepare delicious dishes from its valuable meat. But do not rush to throw away the scraps - they can also be used. For example, boil an ear. The ear from the heads of salmon turns out to be tasty and rich, and its preparation is not much different from the usual.
Products: salmon head - two pieces, two onions, carrots - two pieces, potatoes - 6 pieces, one celery root. Seasonings: bay leaf - 4 pieces, nutmeg - half a teaspoon, black pepper - 8 peas, allspice - 4 peas, salt.
Preparation: wash salmon heads well, if there are gills, then remove them. Put in a pan with water and put on fire. When the broth begins to boil, remove the foam and make less fire. Add onions, one carrot and peas of black pepper. Cook the ear over low heat for about an hour. After that, we take out the heads and completely separate all the flesh from the bone.
Filter the broth, pour back into the pan. Dice potatoes, three raw carrots on a grater. Put vegetables in the broth and cook for 10 minutes. After that we add the flesh of salmon heads, spices, salt and cook for another 10 minutes. Cover the prepared ear with a lid and insist for about 15 minutes.
Finnish salmon ear
Finnish fish soup is a traditional dish in the Scandinavian and Baltic countries, differs from the Russian one in that milk is necessarily present in it. In Finland, such an ear is often prepared for the holidays, and instead of milk, cream is added.
Necessary products: for one liter of water we take salmon fillet - 300 g, one onion, half a kilogram of potatoes, cream (you can take milk) - two glasses, wheat flour - two tablespoons, fresh herbs, salt to taste.
We put boiling water. Cut the potatoes into cubes, cut the onion in half rings. Put the vegetables in boiling water, salt and cook for 10 minutes. We cut the salmon fillet into large pieces, add to the vegetables and cook the same amount. In flour (or milk), add flour and beat with a broom, pour into the ear. As soon as the ear boils, remove from heat. Finnish salmon ear should also stand under the lid for some time. A dish with fresh herbs, white crackers or croutons is served.
