One of the most frequent guests in the refrigerator is minced meat. You can cook it yourself from pork, chicken, beef, lamb, or, as an option, buy it already ready in the store. Each type of forcemeat is intended for preparing its own set of dishes (although much depends on personal tastes and preferences).
Minced meat dishes: bag with minced meat
In addition to the usual set of dishes, such as cutlets or dumplings, there are also very unusual minced meat dishes , for example, bags made from tomato dough and stuffed with minced meat. For cooking, you will need to make a cool dough of flour, tomato paste, eggs, water and butter. Let it brew for 30 minutes, after covering it with a towel, and then roll it thinly. You need to start the bags with a mixture of minced beef and pork, flavored with coriander. The resulting bags need to be boiled in salted water, and serve, seasoned with mayonnaise and pickles.
Minced meat dishes: moussaka
This unusual and very tasty dish came to us from Greece. To cook it, cut medium-sized eggplants (1.5 - 2 kg) into circles, add salt slightly and leave to soak. Fry onion (2 heads) and minced meat (1 kg, pork or beef) in a pan. Add 1 stack there. dry white wine and chopped tomatoes (6 pcs.), salt and stew until the liquid evaporates. Fry the potatoes (half a kilo). Eggplant must also be fried (on both sides). Next you need to sprinkle crackers on a baking sheet. Put about half of the eggplant on it and sprinkle with grated cheese (200 g in total). Put a layer of potato and minced meat on top and sprinkle with cheese again. Pour over the top sauce.
The sauce is prepared as follows: 100 g of oil must be heated on fire until a foam is formed, then we pour flour into it (4 tbsp.) And do not remove from heat with constant stirring. Add 800 g - a liter of milk to the mixture and stir again. The last ingredients are 200 grams of grated cheese, which also need to be poured there, and 3-4 beaten eggs (they need to be added when the sauce is already removed from the heat).
For half an hour we put the resulting dish in the oven. Serve on the table already cooled.
Minced meatballs with mushrooms
For these cutlets you will need about 200 grams of chicken fillet, 10 grams of dried mushrooms, butter, 1 egg, season of onion feathers. Chicken meat must be passed through a meat grinder, salt and sprinkle with pepper, add a couple of tablespoons of milk. Mushrooms are soaked in salt water, boiled, cut into small pieces and added to the already fried onions.
When the filling is ready, you need to roll the forcemeat into thin slices, put a little filling in the center of each and wrap it like pies. Then, each patty should be dipped in a beaten egg and bread in breadcrumbs (ordinary chopped or breading). Pour enough oil into the pan so that the patties are completely immersed in it.
Minced meat dishes : pasta with minced meat and cheese sauce
For this simple but tasty dish you will need ground beef (450 gr), 1 stack. pasta, 1 jar of tomatoes (spicy are best), 2 stacks. water or (ideally) meat broth, 1 pack of seasoning for tacos. And for the sauce, stock up with butter - a couple of tbsp. l., three quarters of a stack. milk, 2 tablespoons of cheese (preferably Cheddar).
In a hot pan we spread the minced meat, tomatoes, pasta, seasoning and pour in broth or water. After they boil, cover the pan with a lid, turn down the heat and simmer for about 15 minutes. (pasta should become soft). To make the sauce, melt the butter in a saucepan, add flour to it and beat. Keep on fire until a light brown hue appears. Do not forget to stir, otherwise it will burn. Then add milk, bring to a boil and beat again (a homogeneous and dense mass should be obtained). In this mass, removing it from the heat, add finely shredded cheese. Pour pasta with minced meat into the resulting sauce and serve.
Minced meat dishes: spaghetti and minced pie
Speaking about minced meat dishes, one cannot but mention pies. For example, from spaghetti and ground beef. So, you will need 450 gr. spaghetti, the same amount of ground beef, a pinch of pepper and salt, a cup of chopped bell pepper (preferably green), the same amount of chopped green onion, 750 gr. basil and tomato sauce, three quarters of a stack. sour cream, 250 grams of cream cheese and a half cup of grated Cheddar cheese.
Cook pasta in salted water. Fry the minced meat until ready, add pepper, garlic, salt, sauce and pasta to it. Bring to a boil and cook for 20 minutes. In a separate bowl, mix sour cream with onions and cheese.
Put spaghetti, cheese mixture, minced meat in the oven pan, and then cover with grated cheese. Bake for 25 minutes with a lid.
