Do you like fruit? If so, then you probably know a lot of amazing and original culinary recipes in which they are used as the main ingredient. But have you heard about fried oranges? Indeed, a very unusual combination. After all, as a rule, we use citrus fruits as a filling for baking and desserts, as well as in fruit salads. But do not immediately reject the seemingly too original idea. Such a dish can become a real decoration of the table, and guests will vying with each other to praise the modern hostess. After all, fried orange can be unusually tasty if cooked correctly. Let's try to put aside the usual recipes and treat our relatives with something exotic.
So you will need:
- oranges;
- apples (twice as much as citrus fruits);
- Madeira or pomegranate juice (1 glass to taste);
- a set of spices (it is advisable not to take particularly sharp, but limit yourself to softer and somewhat sweet tastes)
- cognac or vodka in the amount of 1 tbsp. spoons;
- as a basis, it is best to use the juice that remains after frying the meat (any cooking oil is suitable, as well as a mixture of vegetable and butter).
We proceed directly to the cooking process. Hot dishes of oranges are not whipped up, so stock up on strength, patience and the availability of free time. Well, heat the pan with fat or oil. On it we lay out sliced โโcitruses. The thickness of each piece should be about 5-6 millimeters, so that the fried orange is properly soaked in hot juices. Keep on fire until one barrel gets a golden caramel hue. After this, the fruit is carefully turned over to the other side and brought to the same degree of frying. Too thin pieces will be extremely difficult to move, in addition, they can lose all their juiciness. As soon as the fried orange is ready, remove the circles from the pan and put them on a pre-prepared plate.
Apples need to be cut into thin petals. You can not remove the peel from them, since during the preparation process it will become soft and very tasty. We also fry them, but already on high heat. Fruits must be constantly stirred so that they do not burn. We wait until the apples are soft. However, do not overexpose them to a state of porridge, seize the moment. They need to be salt, pepper, add a set of spices. The most appropriate here are curry seasonings and dried cloves. From them, roasted orange will subsequently become aromatic and very unusual in taste. Add a small amount of pomegranate juice (or Madeira) to this mixture and pour in alcohol almost immediately (after about one minute). This should be done very carefully and slowly so as not to get on fire. Otherwise, there is a danger of a strong flash. Yes, and in a frying pan, high-degree drinks behave extremely restlessly.
All this should be put out in the pan for a few more minutes, after which you can again lay the oranges. It is best to fry without a lid, even if on a high fire all this unusual fruity-spicy rainbow will aggressively hiss and โshootโ hot oil. Then the fruits will get crisp, and not become a homogeneous mass. Oranges need to give time to soak in the apple-alcohol spirit, after which such a snack can already be served.
