Tsimes - what is it and what is it made of?
It can be prepared only from vegetables and dried fruits, and you can add chicken meat. Jewish cymes is a rather fatty dish, this must be taken into account when serving. You can take different parts of the chicken. This recipe is from wings. They need about a kilogram. Chicken wings need to be cut along the joint, rinsed and dried. Then take two hundred grams of chicken fat (internal, it is sold along with whole butcher carcasses on the market, along with offal).
Before cooking cimes, the fat must be melted in a deep saucepan or pan. Then fry the wings in it until a golden crust appears. But she should not be too rude. Transfer the finished wings to the dish. Continue to fry vegetables in fat - first three large carrots (they must be very sweet, this is what the dish specializes in), then two large onions. Together with vegetables, put in a pan one hundred grams of washed raisins and candied fruits (lemon or orange). Fry and pour in portions apple or grape juice (it should be two glasses). By the way, candied lemon can be replaced with half a lemon, which should be finely chopped and also put in the rest of the products at this stage. After the juice, add half a glass of dry wine, honey, sugar and salt to taste. Stew for another fifteen minutes, then cut three sweet apples into cubes and add to the carrot mixture. Fifteen minutes later, the fruit component of cimes will be ready. If during cooking it starts to burn, then pour a little more broth or juice. The mass should be thick and have a rich aroma.

It can be served both hot and cold. A similar Jewish dish - esik flash - meat in sweet and sour sauce. It differs from cimes and chicken in that it is stewed for a longer time and prunes, cloves, tomato paste and a slice of rye bread (and sometimes dried up crushed honey gingerbread) are added to it.

This name is not only a sweet fruit and vegetable stew, but also a carrot salad, as well as simply stewed dried fruits with spices. Bean and chickpea cymes are also found.
