Vegetable Ravioli
This dish can be prepared on a fasting day, if you exclude eggs from the dough. They are prepared very simply:
- Peel 200 grams of pumpkin and cut it into small pieces.
- Peel the onion, chop and fry in vegetable oil.
- Fry the pumpkin and 50 grams of green peas, and then stew in a suitable bowl until cooked. Add salt, any herbs and onions. Using a blender, grind the products to a puree condition.
- Knead the dough, separate the part from it and roll it into a thin layer. Mentally divide the workpiece into two parts and on one of them lay out the filling at an equal distance from each other.
- Close the filling with the second part of the dough, and then fasten the distance between them. Remember to carefully remove the air.
- Cut the Italian dumplings with a curly knife, and fasten the edges with an additional fork.
Boil the dumplings in boiling water for five minutes. After that, fry them in a pan with finely chopped tomato in vegetable oil. If you wish, you can put this dish in the broth and serve it as a first course.
Mushroom ravioli
This wonderful dish will certainly win the hearts of your guests, if you cook it for the evening party. Italian dumplings should be served with tomato sauce and grated cheese. The recipe for mushroom ravioli is quite simple:
- Knead unleavened dough and let it lie down for half an hour.
- Finely chop 500 grams of fresh mushrooms, and then fry them in a pan along with garlic and onions. Be sure to wait until all excess fluid has evaporated.
- Chop half a glass of cashew nuts with a blender, and then mix with a spoonful of parsley. Transfer products to mushrooms and simmer together for a while.
- Roll out the dough, lay on it evenly cooled filling, and then cover it with the same layer.
- Cut the square blanks and press the edges with a fork.
Cook in boiling water until the dough is ready.
Chocolate Ravioli

- Knead the dough with one and a half glasses of flour, three eggs, a quarter glass of cocoa, two tablespoons of sugar and a small amount of salt.

- Roll out the dough thinly enough and lay out a handful of the filling at the same distance.
- Cover the workpiece with the same rolled dough and cut the ravioli with molds or a knife. Press the edges firmly, and then put the Italian dumplings on a plate sprinkled with flour. Let them stand for an hour.
