Especially successful are the options when the composition of the ingredients includes chicken meat. It is not as heavy as, for example, pork, belongs to the category of diet and goes well with various kinds of vegetables.

It is especially good in the spring, when you really want fresh vitamins. It is also very useful because it is made from fresh white cabbage. Boil 250-300 grams of meat in salted water until tender, cool, cut into cubes. Cut the desired piece from the cabbage, chop with a thin straw, gently take it to let the juice flow. Add finely chopped onion feathers (150-200 g) and dill greens to the chicken breast salad. If there is no green onion, chop the usual thinly, in half rings. Mix all the ingredients, pepper, salt. Season with mayonnaise and serve. The dish is very well combined with young boiled potatoes or pilaf, rice porridge.

An original and very tasty salad is obtained from chicken breasts, if you make it with mushrooms, prunes and crackers. Breasts can only be boiled, but can be fried until tender in oil with onions. Separately fry mushrooms (honey mushrooms or whatever). Dry dried prunes in boiling water for softness. The meat is divided into small fibers. Prune and mushrooms cut into slices. Thin straws - a large sweet and sour apple. Lettuce leaves (about 100 g) should be torn to pieces. The components are stacked in a bowl or pan, added, seasoned with mayonnaise. For the best taste and pungency, mix 2 tablespoons of lemon juice with a teaspoon of mustard, add a little icing sugar, pour the dressing into the finished dish. Boiled chicken breast is especially good with it. Put the salad in a suitable vase, decorate with sliced ​​slices of eggs and fresh tomatoes. Serve immediately.

And finally, such a salad. Boil, peel and dice 4 potatoes, 3 carrots, 100 g asparagus, the same amount of fried cauliflower with whole inflorescences (try not to break them during preparation). Prepare half a jar of canned green peas. Slices 2-3 strong tomatoes into slices. Take 100 g of fresh lettuce leaves. Now we “collect” the dish: put the salad in the middle on a plate. On it, a hill - chicken cut into thin slices. Insert a sprig of parsley or dill. Around the middle, like flower petals, arrange the rest of the vegetables. Before serving, salt and pour a special dressing, mixing apple cider vinegar with vegetable oil and ground pepper.
