Cezva is ... Or the story of coffee brewing equipment

The century of technological progress in the yard, and literally everything is now undergoing automation. Even coffee has long been brewed by coffee machines. Well, or as a last resort, they use a “three in one” sachet, which, by the way, does not at all look like a real drink made from ground coffee beans with either taste or aroma. True gourmets, however, brew coffee themselves. For some, this is a whole ritual. And for the preparation of this drink special dishes are used. Cezva is just such dishes. What is cezve?

As a matter of fact, a cezve is a traditional dish in which coffee was originally brewed in a way that the Russians called "in Turkish." This is when coffee is brewed in sand heated on coals or on fire. It comes from the edge of the desert. And translated from Arabic, the name of this vessel literally means "hot coal."

A traditional forged copper cezve is made, but nowadays modern metal alloys are also used for this. Her appearance is a small bucket with one handle. But the shape of the bucket is unusual. The bottom of the dish is wide, and the neck is narrow. Something seems like a cezve. Is it really familiar to all of us Turk?

Are there any differences between Turks and cezves? There is no difference between them. This is the same vessel. So what's the catch? Why use two words? The fact is that the original name of the Turks is cezve, and we began to call it Turk because of the fact that it brewed coffee in Turkish, it is a more familiar and somewhat more familiar word to the Russian language. Its articulative pronounce easier. And how to call this little exotic bucket exactly for you - decide for yourself. Both that, and another name is good and acceptable in a society.

Serdzhep is a brother of the Turks, or cezves. Just a slightly modified Armenian flavor for brewing aromatic coffee. This is generally the most familiar way of preparing a wonderful drink for Muslim countries. To brew coffee with the help of dalla, use coffee powder called finely ground coffee. It is similar in structure to almost dust. The Bedouins who migrated to the African continent invented this vessel. Initially, the dalla was a jug, but eventually decreased in size and acquired its current form. And now, except for making coffee, this jug is no longer used for anything. But cezva is a descendant of ibric, and not vice versa. In ancient times, coffee was made in these vessels. They are even found during archaeological excavations and exhibited in museums as part of the cultural and historical heritage of mankind. The age of such finds is measured in hundreds of years - 600-700. Sometimes scientists find unique vessels up to 100 liters in volume! But it’s the small Ibriks that are used exclusively for brewing coffee beans. There is an opinion that the grains began to be grinded precisely thanks to such a small dish, since their spouts were clogged and the ground coffee flowed quietly.

Ibrik got its name from the Persians. Translated from the Persian language, the word translates as "water" and "pour". Ibric was used not only for brewing coffee, but also for storing wine and water. Practical, isn't it?

In ancient times, Ibriks were made from burnt clay or metal, depending on the financial condition of the owner. Muslim and Ethiopian Ibrikas differ in patterns. On Muslim jugs you will not find images of people and animals, since religion prohibits this. But the Ethiopians, among which many Christians, do not skimp on the decoration of such images of their Ibriks. By the way, patterns on their sides are applied in two ways: embossing or painting.
