I would like to share secrets with you and tell you how to make
cognac from moonshine at home. The quality of this drink should not cause you any doubt, it can be a worthy competitor to branded cognacs. You will undoubtedly get only pleasure from its use. Today cognac generally belongs to the category of elite alcoholic beverages. Classic cognac is produced by distillation of dry white wines, and then long-term aging in oak barrels or containers with oak shavings. Of course, the production of
cognac at home, as well as its quality is far from inferior to the classic version. It will not be an elite, but quite worthy drink, which you can eventually get.
Manufacturing technique
In order to make cognac from moonshine at home, you need a good grape harvest. Then the opportunity arises to experiment with grape wine.
Basically, the best grape varieties go to the needs of the family, and from the rest we will try to make good homemade cognac. Proceed:
- grape varieties such as Stepnyak, Lydia, Golubok, Isabella should be picked only when they are fully ripened;
- pour the juice with the brushes and pour into the pan;
- add sugar (2 kg per 1 bucket of grape juice);
- cover with a clean cloth and put on the bake (term 5-7 days);
- daily mix the wort several times;
- after 7 days, the wine yeast has developed well (the smell of wine should start, the midges should start flying, the pulp should separate and float up), carefully pour the juice into a container prepared in advance, and press the pulp on a screw press;
- add sugar (2 kg per bucket) to the resulting wort;
- pour the juice into glass bottles (you can choose any other, preferably glass), filling up to 70% of the total volume. This is done so that the rising foam does not climb through the neck of the bottle during fermentation;
- we put on additional fermentation under a water lock. The temperature should be 22%. The production of cognac at home, that is, the fermentation process, will last three weeks. You will notice when the bubbles cease to stand out in the water shutter and the yeast has already precipitated, then be sure that the fermentation is successfully completed. Next, drain the wine. The preparation of moonshine at home begins, as you will need to distill the wine on a moonshine. After the first distillation has been completed, the resulting product should be diluted with ordinary water, the volume of which is the same as that of the obtained grape moonshine.
Then we carry out the second and third distillation according to the same rules. After the third distillation, you get purified
wine spirit, whose strength is 70-80%. Next, you need to let the alcohol brew on oak (an
oak barrel is best
