To knead the dough you will need the following ingredients:
- necessarily flour (about 350 grams);
- milk, which will need 150 ml (a little less than a glass);
- sugar, about 130 - 140 g;
- raisins (well washed - 120 g);

- yeast so that the raisin buns turn out to be lush and beautiful;
- 2 chicken eggs;
- A little zest of fresh lemon;
- Salt.
Mix all the ingredients in a special way, observing all the proportions and sequence. First you need to slightly heat the milk, where yeast is subsequently added. It is good if they are dry. If not, then they need to be significantly chopped (on a grater or knife). It should also put 1 tsp. sugar and a couple of the same spoons of flour. After everything is thoroughly mixed, you need to put it all in a warm and dark place for 20-30 minutes.
While the milk-yeast mixture is suitable, the flour that remains is sifted. After that, it is just in it that the dough is poured. All this is mixed with 100 g of sugar, chicken egg and chopped zest of one lemon. Mix thoroughly with a mixer or whisk and lightly salt. As soon as the dough acquires a viscous consistency, it is better to finish it off and knead manually.
Buns with raisins are called this because they add this dried fruit to the dough. You can flavor it with butter, so that subsequently the delicacy does not burn in the oven. Knead the dough so that it has good elasticity. Only after that it should be rolled out and left warm for an hour and a half.
Once the dough is suitable, it must be divided into small pieces and form buns with raisins from them, which are laid out on a baking sheet. For the delicacy to rise a little more, the buns are left to stand for a couple of minutes. Only after that they should be greased with a specially prepared, beaten egg and sprinkled with sugar on top. Buns are baked for twenty minutes until they get a beautiful crust.

In order to make raisin pies, you will need flour (about 200 g), cottage cheese (400 - 450 g), butter (about 150 g), a little vanilla sugar, granulated sugar (100 g), raisins (30 - 50 g), a chicken egg and some milk (about 2 tablespoons).
To prepare the pie dough, sifted flour, 150 g of cottage cheese, butter and special vanilla sugar should be mixed. The resulting mixture was placed in the refrigerator and kept there for an hour.
While the dough is cooling, you can prepare the filling of raisins, cottage cheese, sugar and protein. Of course, everything needs to be mixed. Only then the dough ready for use is rolled out and cut into small squares. They put the stuffing in them, after which they form real pies, which are placed on a baking sheet, greased with fat.
Beat the yolk with a little milk in advance. This mixture is slightly lubricated with the surface of the pies, which are placed in the oven, which should already be heated to 180 degrees. It is enough to bake only 20 - 25 minutes, after which the treat can be served.
