How to cook a delicious dough for kefir pies

Cakes are a great choice for a delicious Sunday lunch for the whole family and a great treat for unexpected guests. Almost every housewife has her own recipes and preferences for cooking this type of baking. You can experiment with the fillings indefinitely, bake pies in the oven or fry in a pan, use yeast or puff pastry. Many housewives liked the dough for kefir pies . Unlike yeast, the preparation of such a dough does not take much time, using it, you can quickly cook the required number of pies.

Filling for pies is a topic for a separate discussion, there are too many varieties of them, but the dough for pies on kefir can be prepared with just a few options, combining different ingredients.

The simplest kefir test recipe contains only flour and kefir in a ratio of 1: 2, that is, 0.5 l. kefir will need a kilogram of flour. It is better to take pancake flour in such a dough, to taste you can add a little salt or sugar to the dough. From kefir with flour, knead the dough, if it turns out to be very soft, add flour. Separate the dough so that the pieces turn out to be approximately the same, knead or roll a little and add the filling. Fry the pies in a pan in vegetable oil.

More ingredients contain another dough for kefir pies, which can be called universal for products with any fillings. For its preparation, 500 gr. kefir is also taken 1 kilogram of flour, as in the previous recipe, but in addition, two eggs are added, 2-3 tbsp. l vegetable oil, quite a bit of slaked soda, a little sugar and salt. Such a dough will turn out more dense and elastic, when frying it turns out a very lush white crumb. All possible types of fillings and minced meat are perfectly combined with it - apples, mashed potatoes, jam, onions with eggs, sausages, minced meat, rice, liver, but nevertheless this dough is perfect for pies with cabbage. These and other pies are best fried in vegetable oil, but if desired, you can bake in the oven, then the surface of the pies will need to be greased with a beaten egg.

If desired, you can slightly modify this recipe and prepare a very tender dough for kefir pies. For the test you will need one egg, one glass of kefir, about two glasses of flour, a little soda (1/2 tsp), salt and sugar to taste. First you need to beat the egg with sugar, then mix all the ingredients except flour. Lastly, add the flour very carefully one tablespoon, constantly stirring the dough. It should, by consistency, resemble a curd mass or dough, like very thick pancakes, do not add a lot of flour - it needs just enough to form pies normally.

Then you should sprinkle the table with a thick layer of flour, lay out portions of dough on your flour sprinkled palm with a spoon moistened with water. Flatten a little and put the filling. Remember that when cooking, the pies will almost double in size, so there is no need to spare the toppings. Pinch the edges and lay on a table sprinkled with flour, after a few minutes they can be sent to the pan. Such pies are distinguished by the fact that they contain much less flour than traditional ones and therefore they do not stale longer and remain fresh.

Delicious juicy and satisfying pastries can be obtained if you use the dough for whites on kefir. In order to make such a dough, you need to take one egg, 2-3 tablespoons of sugar, a little salt, and the main difference from the pie dough is yeast, for 0.5 liters of kefir and one kilogram of flour. For the preparation of dough 10 gr. dry or 30 gr. dilute live yeast in 5-10 ml. warm water or milk, after a few minutes, when a yeast foam forms, mix all the remaining ingredients. When the dough ceases to pester, then it is ready. Such a dough should not be too cool. Set aside for an hour in a warm place, then it will grow faster. Lay prepared mincemeat on thinly rolled dough cakes and pinch them, shaping the whites. Fry for several minutes in hot oil. If you make small whites with a very thick layer of dough, then it’s good to bake them only in the oven.
