The recipe for triangles with meat and potatoes came to us from the Tatars. This dish is national for them, and it is served on the table for all holidays and celebrations. Mostly triangles are cooked with lamb, but it is quite possible to use beef or pork.
Basic recipe
To prepare Tatar triangles with meat and potatoes, we need:
For the test:
- warm water - 50 ml;
- milk - 1 cup;
- raw egg - 1 pc.;
- dry yeast - 10 g;
- salt - 1 pinch;
- sour cream 20% - 1 tbsp. l .;
- creamy margarine - 50 g;
- granulated sugar - 1 tsp;
- unrefined sunflower oil - 2 tbsp. l .;
- flour - 500-700 g.
For filling:
- potato tubers - 2-3 pcs.;
- bay leaf - 5 pcs.;
- boneless pork - 300 g;
- onions - 2-3 pcs.;
- spices to taste
- raw egg - 1 pc.;
- butter - 30 g;
- milk - 50 ml.
Cooking the dough for triangles with meat and potatoes: a step by step recipe
Put the margarine in a glass bowl and put in the microwave for 40 seconds. Then we take the melted margarine from the oven and mix so that the remaining lumps dissolve. Move the bowl aside.
Gently pour the flour into a sieve, and then sift it into a deep bowl. So we get rid of lumps. Thanks to this action, the dough will be soft and airy.
Take dry yeast and pour them into the bowl, then add warm water and mix thoroughly. The result should be a liquid homogeneous mass.
Pour milk into a saucepan and put on a gas stove. The fire should be small. We warm the milk to room temperature. Important: if the milk is hot, the yeast and egg may curl and the dough will be spoiled. Pour milk into a large bowl.
Add melted margarine, salt and granulated sugar to the bowl, mix, and then add the egg and sour cream. All ingredients are mixed well until smooth. If you decide to use a mixer, set the average speed. Add yeast to the resulting mass, and then mix everything again. Now add our flour, you need to do this gradually, not forgetting to constantly stir, so that no lumps form.
When all the flour has been added, begin to knead the dough with your hands, and add the sunflower oil. The dough should be elastic and soft, and it should not stick to your hands. When our airy dough does not stick, cover it with a napkin and set it in a dark and warm place for an hour. This time is enough for the dough to rise.
Cooking stuffing
The meat for triangular pies should be with a little fat, then the filling will be tastier and juicier. Before you cut the meat into pieces, you need to thoroughly rinse it. Then separate the veins and the film. Slices for the filling should not be very large, just 1 cm is enough. We put the prepared pork slices in a bowl and add bay leaves, mix everything and remove to the side.
Rinse and peel potatoes. After this, potato tubers should also be cut into 1 cm thick slices. Add the chopped potatoes to the meat and mix thoroughly. Peel and finely chop the onion. Add the onions to the bowl and mix again.
We take bay leaf from our filling and add spices to taste. Mix thoroughly and set aside. The filling for the triangles with meat and potatoes is ready.
Cooking pies
Now we get the dough. It has already risen and is ready for use. We put our dough on the table, do not forget to first pour a little flour so that it does not stick to the surface of the table. Knead the dough and cut it into 12 parts. Take a rolling pin and roll out each piece. In this case, the thickness of the layers should not be more than 0.4 cm.
For each cake, add the prepared filling. Then we take the first cake and pinch its edges, so that we have a triangle. Then we do the same operation with other blanks. We put the finished triangles on a baking sheet covered with baking paper.
Pour milk into a small bowl and add a raw egg, mix thoroughly until a homogeneous consistency. Grease each triangle with the resulting mass, it will give the pies a rosy appearance.
In a preheated oven, put a baking tray with pies. We bake pies until golden brown, at a temperature not exceeding 200 degrees. The approximate baking time is an hour. We get ready pies and grease them with butter. This will give them an even more delicate taste.
