As the holidays draw near, many housewives begin to flip through the Internet in search of new tasty salads that can be made quickly and easily. In the article we will offer some interesting salad recipes with mushrooms and potatoes, which will decorate and diversify the festive feast.
Making them is easy, so even a novice housewife can handle it. These salads can be completely different. If the potatoes are mostly boiled “in their skins”, then a variety of mushrooms are used - pickled from a tin can, fresh champignons, which can be purchased at any supermarket, or mushrooms picked by hand in the forest.
Salad with mushrooms and potatoes can be mixed in a salad bowl or made in layers, served hot or aged in the refrigerator. This is a tasty and satisfying dish, which is complemented by a wide variety of ingredients, interconnected with mayonnaise or sour cream sauce, olive oil or mustard filling.
Pickled Salad
Salad with mushrooms, cucumbers, potatoes is cooked in just 20 minutes, and most of the time is spent boiling the potatoes “in their skins”.
Cook the following foods:
- canned mushrooms - 250 grams;
- pickles (not pickled) - 2 pieces;
- onions - 2 medium-sized onions;
- 3 tbsp. l refined vegetable oil;
- fresh dill greens - several branches;
- potatoes - 4 root crops;
- salt and black pepper, as usual, to taste.
For the marinade for 1 cup of boiled cold water, take 1 tbsp. l sugar, 1 tsp. salt and 4 tbsp. l vinegar 9%.
Cooking
First, put the boiled potatoes, wash them thoroughly under wastewater. Then mix the marinade in the bowl and put the onion chopped into thin rings. You can use red, it is more sweet and fragrant. The onion should be in the marinade for 20 minutes.
In the meantime, peel the boiled potatoes and cut into small salad bowls in small cubes. Rinse pickles under wastewater and chop finely. In our salad with mushrooms and potatoes, pickled mushrooms are used. They are thrown whole, as they are small in size. The marinade with onion is filtered through a sieve and the mass is slightly squeezed. Add finely chopped fresh dill at the end. All ingredients are salted and sprinkled with black pepper to taste. Pour with vegetable oil and mix thoroughly. You can serve it to the table!
Puff Chicken Salad
Very satisfying and tasty is a salad with chicken, mushrooms, potatoes and carrots, laid out in layers. Before you begin, prepare the following ingredients:
- a jar of pickled mushrooms;
- a pound of chicken;
- 2 onions;
- 2 potatoes;
- 1 medium-sized carrot;
- 2 eggs;
- 100 grams of any hard cheese (to taste);
- 3-4 tbsp. l mayonnaise;
- vegetable oil;
- fresh herbs: dill, parsley and green onions;
- for decoration, you can use mushroom caps and canned corn.
Since the salad is made multi-layered, each product is prepared separately and does not mix with other components.
How to cook a salad
Puff salad with mushrooms, chicken, eggs, potatoes begin to cook with boiling vegetables, eggs and meat. After cooling, the fillets are directly disassembled by hand into separate parts, as in the photo above. Carrots and potatoes are peeled and rubbed on a coarse grater. Boiled eggs are peeled and finely crushed with a fork on a plate. Hard cheese is best grated chilled, so keep it in the refrigerator until the salad is cooked. Fry the mushrooms in a pan with onions, sliced in rings.
Cake salad with mushrooms, potatoes, cheese and chicken is laid out in the following layers:
- Put chopped potatoes on a large dish, salt and grease the layer with mayonnaise.
- Mushrooms with onions.
- Grated carrots plus mayonnaise.
- Chicken meat, divided into small parts. The layer is salted and smeared with mayonnaise. If you wish, you can pepper the chicken.
- A layer of hard cheese, smeared with mayonnaise.
- Finely chopped egg and fresh herbs.
- The top layer can be left in the resulting form, or can be decorated with corn, mushroom caps, laid either on the entire surface or around the circumference of the dish.
Fried chicken salad
Salad with mushrooms, potatoes, carrots can be varied, adding new ingredients.
To prepare this hearty dish you will need:
- 4 chicken thighs;
- a half-liter can of pickled mushrooms;
- 1 onion;
- boiled potatoes - 1 pc.;
- 1 large carrot;
- can of peas;
- 2 pickles;
- dressing mayonnaise;
- vegetable oil for frying mushrooms and vegetables;
- salt and spices to taste.
Procedure
Chicken thighs need to be peeled and a bone cut. Then salt the meat and fry in vegetable oil in a pan. Separately passively chopped onions and carrots until golden brown. Boil the potatoes and cut into small cubes after cooling.
Drain canned peas through a sieve to get rid of excess fluid. Follow the same procedure with mushrooms. Rinse pickles under wastewater and cut into small cubes. Pour all the ingredients into a large salad bowl.
Add chicken, diced or thin strips (optional), fried vegetables and potatoes. It remains only to salt everything, pepper and mix with mayonnaise at will. Serve the salad immediately after its preparation. You can add fresh herbs.
Mushroom salad
This salad with mushrooms and potatoes is done in minutes. Consider first what foods you need to cook:
- a pound of potatoes;
- 300 grams of fresh champignons;
- 1 can of canned peas;
- 1 small onion;
- fresh parsley - 1 bunch;
- mayonnaise;
- salt;
- black pepper as desired.
Boil potatoes separately. Peel the cooled vegetables and cut into large pieces. Boil the champignons in salted water for 5 minutes after boiling. Drain the mushrooms and dry them slightly on a plate. Then they are cut into thin slices. It is advisable to use onion sweet varieties. You can pre-marinate, but it will turn out delicious with fresh. Peel it and cut into thin half rings.
Drain the peas over a sieve to get rid of excess water. Mix all the ingredients in a salad bowl with salt, pepper and mayonnaise. Before serving, chop finely the parsley and mix everything again.
Ham salad
Very tasty salad with mushrooms, eggs, potatoes, if you add ham.
To prepare it, purchase the following products:
- 3 chicken eggs;
- a pound of potatoes;
- 300 grams of ham;
- a can of canned champignons;
- mayonnaise;
- salt and pepper;
- green onions - 1 bunch.
Layering
Boil the eggs and potatoes, drain the water and cool slightly. Then finely chop into small pieces. Lay eggs on the bottom of the deep plate, salt and grease with mayonnaise.
Then fill in the cubes of potatoes, again salt and grease the sauce. The next layer is ham plus mayonnaise.
Wash a bunch of green onions under wastewater and chop finely on a plate. Sprinkle generously on top of the lettuce. It remains only to lay out on top the caps of pickled champignons. You can also cut them into thin slices and cover the entire surface of the puff salad.
We use fried mushrooms.
For such a tender salad, you can choose a variety of mushrooms - pickled or canned in their own juice, fresh champignons or fragrant mushrooms. If the mushrooms are used in finished form, then the marinade is drained, and they are washed under wastewater to get rid of excess acid from vinegar. Fresh first boil for 3 to 4 minutes. Then the mushrooms are fried in a pan in vegetable oil with the addition of onion rings.
To prepare a salad for 4 servings, it will be enough to buy 300 grams of mushrooms and 1 large onion. Also boil 4 or 5 medium-sized potatoes in a “jacket”, peel them and cut into small cubes. Sour the salad will add 2 finely chopped pickles.
When all stages of the salad preparation are completed and the composite ingredients are mixed in the salad bowl, prepare the filling separately. It is made up of sour cream or cream, spices and salt. First, beat the mixture into a thick mass, and then add a finely chopped bunch of fresh dill. Pour the salad into the sauce and mix. Cream will give the dish extraordinary tenderness.
