The dough for dumplings with potatoes can be different. But real Ukrainian dumplings are always prepared from lean dough and are tasty and low-fat. As the filling, various ingredients are used: potatoes, cabbage with onions, meat, liver, cottage cheese, mushrooms and various berries.

potatoes do not contain eggs and milk. Today we will describe some simple and interesting recipes that will delight you with their delicious taste and speed of preparation.
Lean dumplings with cabbage and potatoes
The main components:
- a glass of flour;
- boiled water - 100 grams;
- onions in the amount of two pieces;
- sour cabbage - 600 grams;
- 400 grams of potatoes;
- a bunch of dill;
- salt, black pepper;
- vegetable and olive oil - 50 grams;
- a pinch of sugar.
We knead the dumpling for dumplings with potatoes and sour cabbage: pour boiled water into a deep cup, pour the sifted flour and salt, carefully knead with our hands to make our lean dough soft and elastic. Cover it with a napkin and leave for half an hour.
And during this time we will prepare an easy and healthy filling. Peel the potatoes and cook in salt water until tender, then push it into a puree mass and add a little vegetable oil.
We pass the onions in sunflower and olive oil. Part of the onions, together with chopped herbs and black pepper, are mashed. To the remaining onion add sauerkraut, pepper and a pinch of sugar - simmer for 10 minutes.
We roll the prepared dough for dumplings with potatoes into a layer and squeeze out small circles with a glass, onto which we put the fillings. The edges need to be well covered up so that the filling does not fall out during cooking.
Dumplings are sent to boiled water and cook for 7 minutes. In a cup with ready-made βdumplings,β you can add butter and chopped greens. Serve with sour cream, pickles or fresh vegetable salads - you will lick your fingers!
Lean Potato Dumplings with Mushroom Sauce in a Pot
Products for dumplings:
- flour - 350 grams;
- warm water - 150 ml;
- carrot;
- potatoes - 400 grams;
- onion head;
- dill;
-salt pepper.
For mushroom sauce you will need:
- a pound of champignons - mushrooms can be taken frozen, pickled or fresh;
- two cloves of garlic;
- bow;
- black pepper, salt, cilantro.
We prepare the dough for dumplings with potatoes: salt, pour water and knead a cool dough - leave it warm under a napkin for 40 minutes.
Stuffing: mashed boiled potatoes, mix with vegetables passivated in vegetable oil - onions and carrots. Add finely chopped dill and black pepper to this mass.
Knead the prepared lean dough with your hands, roll out a large sheet and use the glass to make mugs. We spread potato and carrot filling on each circle.
We make
mushroom sauce: lightly chop the onion chopped into cubes and add chopped mushrooms to it, slightly add salt - simmer for no more than five minutes. Turn off the fire and squeeze the garlic, then close the lid.
Boil dumplings with bay leaf, put them in clay pots, and pour mushroom gravy on top - send to the oven for about seven minutes.
This original and spicy dish is perfect even for a festive table.
