Fasting is a very strict period, one might say, biased to the composition of the diet. But even he sometimes allows himself to be pampered with pastries. And if there is time, then at least every day.
Pastry in fasting, of course, cannot be rich, that is, containing eggs, milk, butter and even modest margarine. The dough is based on only water and flour, nevertheless excellent pies are made from such a batch, and especially those that are fried in a frying pan (this, of course, are not quite pastries, but pies), rolls, pizza, rolls. That is, everything that the soul and stomach yearns for most during severe restrictions.
Baking is test dependent
The quality of the finished product depends on how well the dough is kneaded, how and in what quantity the ingredients are selected, how the conditions for its “maturing” are met.
Baking during fasting is a complete transition to “nonfat” dough: water + flour + salt + a little sugar + vegetable oil. This is a basic recipe for all types of lean baking, which can also be successfully used for making dumplings, homemade noodles and pancakes.
Experienced housewives know that even with such a limited number of ingredients, you can surprise households with amazing pomp with loaves and pies. The main thing is to knead the dough correctly and approach the matter with the soul.
As for the test itself, it answers the same thing - it fits quickly and efficiently, especially if mixed in warm water and stand for several minutes in a warm place. And if the yeast is fresh.
Estimated time to increase the test in volume is 30-40 minutes.
Features of kneading on the water
Like it or not, but baking during fasting has more advantages than disadvantages. Firstly, everyone has flour and water, which means that home-made bakery products are available to all segments of the population.
Secondly, home-made cakes, no matter how modest a recipe were prepared, turn out to be much tastier than purchased. It can be eaten fresh as soon as it cools - this is an absolute plus.
Thirdly, it does not grow stale and moldy longer. The structure of the lean cake is slightly different from the muffin - the lean pastry is more porous and viscous (“rubber”), but this allows it to keep freshness longer.
