Cod Fish Cakes

First, prepare the minced fish. We clean the fish, remove the bones and peel, if you have fish fillet, remove only the skin. Then grind the fillet and onion in a meat grinder. In the minced meat, add butter (since the fish is non-greasy, butter will complement the taste and give the cutlets juiciness and softness), beaten eggs, semolina and salt and pepper. - filet tracks - 1 kg;

- celery stalks - 3 pieces;

- one large onion;

- a couple of slices of white bread or loaf;

- one egg;

- fresh parsley;

- breadcrumbs;

- salt to taste.

For hot sauce:

- mayonnaise - 3 tablespoons;

- 2 teaspoons of chili sauce;

- 2 teaspoons of lemon juice.

First, prepare the minced fish: we pass the cod fillet through a meat grinder, along with onion, white bread (it is needed so that the cutlets are magnificent). We mix everything thoroughly. Then we take celery stalks, finely chop, fry in vegetable oil and combine with minced fish. Beat the egg and salt, combine with the minced meat and mix thoroughly so that the salt is evenly distributed throughout the mass. Then we form cutlets from the prepared minced meat, then breading in breadcrumbs on both sides and sending them to freeze so that the cutlets do not fall apart during frying. After the cutlets are frozen, fry in vegetable oil until a characteristic crust. From this amount of meat, 10 large meatballs are obtained. To prepare the sauce, mix mayonnaise, chili sauce, lemon juice and finely chopped parsley. Serve the cutlets hot, gently spread the sauce on top. As a side dish, you can use the same rice.
