Chicken Liver Dishes

All meat offal is rich in vitamins, minerals and proteins. The only drawback is that they can contain toxins if the animal was raised on poor-quality feed. However, these products are safe if consumed in moderation. Chicken liver dishes are good because they are low in sodium compounds. It is also a good source of thiamine, zinc, copper, manganese, protein, vitamin A, riboflavin, vitamin C, niacin, vitamin B6, folic acid, vitamin B12, pantothenic acid, iron, phosphorus and selenium. But chicken liver dishes have a certain minus: they are characterized by high cholesterol.

Recipe 1

For 8 servings of Jewish cold chicken liver, you will need the following ingredients:

- 0.5 kg of chicken liver;

- 3 large onions, diced;

- ¼ cup oil;

- 4 hard boiled eggs ;

- salt;

- pepper.

The liver is cooked or fried until tender. The onions are fried in oil until browning, and to prevent burns, they are constantly stirred. Grind the liver in a combine. Add eggs and grind everything. Report onions and butter remaining in a pan, sprinkle with salt, pepper, mix everything in a combine to the desired consistency (for an amateur: coarse or thin, like paste). Spread in a bowl, cool in the refrigerator for at least 2 hours. Served with crackers or Jewish traditional holiday bread (called challah), which is prepared from yeast pastry.

For risotto and chicken liver dishes (4 servings) you need the following set of products:

For risotto, take:

- 1 ½ cup arborio rice (round, not long rice with a high starch content). Before cooking, they do not wash it, so as not to wash starch from it and achieve a velvety texture of the dish;

- 4 tablespoons of butter;

- 1 onion, sliced ​​into thin half rings;

- 5 glasses of chicken broth;

- salt;

- pepper;

- ¾ cup of fresh grated Parmesan cheese;

- chopped parsley leaves;

For the liver you will need:

- 0.5 kg of chicken liver;

- 2 tablespoons of flour;

- 1 glass of strong dessert wine Marsala (originally from Sicily);

- 3 tablespoons of olive oil;

- 2 tablespoons of chicken broth.

Risotto is cooked. In a stewpan, heat 3 tablespoons of table oil. Add onions and fry for 5 minutes (until soft and transparent). Pour rice and on medium heat for 2 minutes soak in oil. In order not to burn, continuously stirred with a wooden spoon. Pour half the hot broth. They constantly stir with a wooden spoon until the rice almost completely absorbs all the liquid. Continue adding the broth in portions until the croup is soft, about 20 minutes. Season with salt and pepper. Remove from heat and immediately add the remaining tablespoon of oil and parmesan. Stir and keep warm.

Chicken liver is thoroughly rolled in flour, the excess is shaken off. In a saucepan over medium heat, heat the oil. Spread the liver and fry for 5 minutes until golden brown. Pour wine and stew for another 5 minutes. Season with pepper and salt. Pour in chicken stock. Keep on medium heat until cooked for about 3 minutes. The broth should boil off slowly, but to slightly thicken the sauce. Serve chicken liver immediately, laying in the center of the dish, and around it hot risotto. Garnish with parsley.

Recipe 3

A very delicious chicken liver salad with mushrooms is obtained . 6 servings will require products:

for refueling:

- 1 thin glass of yogurt;

- juice of one lemon;

- 30 ml of olive oil;

- 1 teaspoon of salt;

- 1 tablespoon cayenne pepper ;

- ½ clove of garlic (crushed);

for salad:

- 0.4 kg of chicken liver;

- 60 g of flour;

- 1 thin glass of champignons (buttons), cut in half;

- 1 tablespoon of soft cream cheese;

- ½ of the cucumber is cut into cubes;

- 1 beet is boiled and finely chopped;

- 1 green pepper cut into cubes;

- lettuce leaves washed and dried.

All ingredients are mixed for dressing and left in the refrigerator. Heat the butter, roll the liver in flour and fry it on each side for 2 minutes or until browning. Set aside. Mushrooms are fried in the same pan until golden brown and seasoned with cream cheese. Set aside. Spread lettuce leaves, on them - the liver and mushrooms, pre-mixed in a bowl with the rest of the ingredients. Salad with chicken liver and mushrooms is ready. Immediately before serving, add salad dressing.
