Homemade noodles are easy to make. It is most often used for cooking soups, but there are other possible options. It can be stewed, fried and even baked. The most interesting homemade noodle dishes are described below. You will surely find a suitable recipe.
Chicken Noodle Soup
This first dish is familiar to everyone since childhood. It is considered dietary, therefore it is served to both children and supporters of various diets. The routine of Homemade Noodle Soup usually includes chicken, onions and some vegetables. The full composition of this menu item differs slightly in different institutions. To develop a home-made noodle soup preparation, you need to accurately calculate the amount of each component and their proportions. For example, this list might look like this:
- 700 grams of chicken thighs;
- 1-1 / 4 l. h. black pepper;
- half a liter including salt;
- 1 liter Art. rapeseed oil;
- 1 large onion, chopped;
- 1 clove of garlic, minced;
- 10 glasses of chicken stock;
- 4 minced celery;
- 4 medium carrots cut in half rings;
- 2 leaves of laurel;
- 1 liter h. fresh thyme or 0.25 liters. including dried;
- 3 cups homemade egg noodles;
- 1 liter Art. chopped fresh parsley;
- 1 liter Art. lemon juice.
How to cook this light dish?
Pour water into a 5-liter pan, put chicken in it, salt and pepper. Cook for 45 minutes. Strain the broth and measure ten glasses.
Pat the boiled chicken dry with paper towels, sprinkle with a little pepper and salt. Heat oil over medium heat in a deep frying pan. Add chicken in portions, fry until dark golden brown for 3-4 minutes. Then remove it from the pan and remove the skin.
Preparation of the remaining components
Pour out all the fat from the pan, leaving a very small amount in it. Add onions there, fry over low heat until cooked for 4-5 minutes. Put the garlic, fry one more minute. Add a little broth while stirring to grab all the pieces of vegetables from the pan. Bring the rest of the broth to a boil in a saucepan. Put the entire contents of the pan, as well as chicken, celery, carrots, bay leaves and thyme. Reduce heat, simmer for 25-30 minutes. Chicken meat should be very soft and literally fall off the bones.
Put the chicken on a plate. Remove the soup from the heat. Add homemade noodles to it. Let the soup stand, covering the pan with a lid, until the noodles are soft, for 20-22 minutes.
Meanwhile, when the chicken has cooled sufficiently enough, remove the meat from the bones and cut it into small cubes. Put it back in the pan. Add parsley and lemon juice. Adjust the amount of pepper and salt. Remove the bay leaf. Serve your favorite dish of homemade noodles and chicken hot.
Asian style homemade noodles with chicken

- 4 large eggs;
- 1 liter Art. unsalted butter;
- a glass of sweet corn;
- 1 liter Art. olive oil;
- 240 grams of fresh spinach;
- 1 liter of chicken stock;
- 1 liter including red miso paste;
- 200 grams of homemade ramen noodles;
- 200 grams of cooked chicken (from cooking broth);
- 4 things. leeks, thinly chopped;
- sesame oil for dressing;
- pieces of nori or seaweed for serving.
How to cook chicken ramen?
This homemade noodle dish is prepared like this. First boil the eggs for 6 and cool in a bowl of ice water. Cut the chicken into small cubes, removing all bones and skin.
In a small frying pan, heat the butter and add the corn. Stir frying it from different sides. If desired, you can sprinkle it with salt and pepper. Transfer the corn to a bowl. Add olive oil to the pan and cook the spinach until soft.
Heat the chicken stock in a saucepan to a boil. Put the paste in it and stir. Add ramen noodles and cook for 2-3 minutes. Once ready, pour the noodle broth into serving bowls equally. It is best to first put corn, spinach and chicken in them, and then pour a little broth. Finish the dish with chopped leek, sprinkle with sesame oil and garnish with soft-boiled eggs, cut in half. Sprinkle a few pieces of nori over the surface of the dish.
Mongolian meat noodles
Recipes from homemade noodles are found in cuisines of different nations of the world. Mongolian cooking is no exception, since in this country they traditionally eat dough products and meat. To get a tasty result, you need to use one trick. Chop the pieces of beef in corn starch. Firstly, it makes the meat crispy and rosy on the outside. Secondly, it helps to thicken the sauce. To prepare this Mongolian dish with homemade noodles and meat, you will need:
- 3 bunches of homemade noodles;
- 2 l Art. vegetable oil;
- 500 grams of beef tenderloin, cut into pieces across the fibers;
- 2 l Art. corn starch;
- 1 liter Art. sesame oil;
- 3 cloves of garlic, minced;
- 1 liter including chopped ginger;
- half a glass of soy sauce;
- a quarter cup of brown sugar;
- a glass of chicken or beef broth;
- a pinch of red pepper;
- large head of broccoli, cut into inflorescences;
- 1 carrot, peeled and chopped into thin strips;
- 3 pcs. leeks, thinly chopped;
- fried sesame seeds, for decoration.
Cooking Mongolian Noodles
Boil the noodles for several minutes. Drain and set aside.
In a large skillet over medium heat, heat oil. Stir beef with corn starch. Add to the pan and fry, until a crisp forms, about 2 minutes on each side. Transfer to a plate.
Reduce the heat to medium-low. Add sesame oil to the pan and put the garlic and ginger. Cook for one minute until a strong aroma appears, then add soy sauce, brown sugar and broth. Bring the mixture to a boil, reduce heat and simmer until the sauce thickens, from 3 to 5 minutes.
Add broccoli and carrots, then cover the pan tightly and simmer until the vegetables are tender, about five minutes. Return the beef to the pan and mix until fully coated with the sauce. Add boiled noodles and spring onions. Garnish with fried sesame seeds. You can cook this main dish with homemade chicken noodles by replacing beef with it.
Asian Shrimp Noodles
This is a light soup with homemade noodles, the preparation of which takes only 20 minutes. It consists of shrimp and spicy sriracha sauce, due to which the dish acquires a spicy taste. In total, you will need:
- 3 l Art. sesame oil;
- 300 grams of large shrimp, peeled;
- 1 liter including dried basil;
- 1/2 l. including salt;
- 1/2 l. including black pepper;
- 2 l Art. hot sriracha sauce;
- 1 small yellow onion, diced;
- 1 small red bell pepper, diced;
- 1 liter Art. ginger, grated;
- 6 cloves of garlic, minced;
- chicken broth - 4 glasses;
- 2 glasses of water;
- 2 l Art. tomato paste;
- 1/2 l. including garlic powder;
- 1/2 l. including onion powder;
- 1/2 l. including salt from celery;
- 1 liter Art. soy sauce;
- 1 liter Art. rice vinegar;
- 3 bunches of homemade ramen noodles;
- 1 cup young spinach, coarsely chopped;
- 2 l Art. fresh lemon juice.
Cooking Spicy Shrimp Noodles
Heat a tablespoon of sesame oil in a large pot or roasting pan over low heat. Add shrimp in one layer, sprinkle with dried basil, salt and black pepper. Cook the prawns for about one minute on each side or until they are solid and pink. Use a slotted spoon to transfer them to a cutting board.
Add the remaining sesame oil to the same pan. Bring it to a low hiss on low heat. Add sriracha sauce, chopped onion and red bell pepper. Fry for 4 minutes, stirring occasionally, or until vegetables are softened. Add ginger and garlic and cook for about 1 minute.
Pour in a little broth, mix the entire contents of the pan and pour into the pan. Add the remaining broth and water, mix well. Increase the heat and let the soup boil quickly. It only takes a minute or so. Add tomato paste, garlic and onion powder, celery salt, soy sauce and rice vinegar. Mix well to combine the ingredients. Reduce heat and simmer for 8 minutes.
While the soup is boiling, cut the cooked shrimp into pieces, set aside. Coarsely chop the young spinach. Add the dry ramen noodles to the broth and cook for 2 minutes, stirring occasionally if necessary. Put shrimp, spinach and lemon juice in the soup, mix well, and then remove the pan from the heat. Try the broth and adjust the spices as needed. Pour the soup into bowls and serve immediately.
Noodles with meat sauce
This is a tasty and satisfying dish of homemade noodles for the second. It is prepared quite simply and does not require a large number of ingredients. In total, you will need:
- 500 grams of low-fat ground beef;
- 700 grams of hot grilled sausages, without shells;
- 2 l Art. olive oil;
- 1 large yellow onion, diced (approximately 2 cups);
- 2 medium garlic cloves, minced;
- a quarter cup of tomato paste;
- 800 grams of mashed tomatoes;
- 450 grams diced tomatoes;
- 1/2 l. including dried basil;
- 1/2 l. including dried oregano;
- 1 liter Art. light brown sugar;
- 1.5 l including kosher salt, or to your taste;
- 1 liter including ground black pepper or to taste;
- 1/4 l h. crushed red pepper, or to your taste.
Cooking a dish of homemade noodles with tomatoes and minced meat
Place a large pan with a thick bottom on the stove, heat at medium temperature. Fry slices of sausages and minced meat, melting all the fat in their composition. Use a spatula to break the meat into small lumps. Increase the heat and sautรฉ the minced meat and sausages until they turn pink, 3-5 minutes. Put in a colander, drain the liquid and fat. Set the meat aside.
Wipe the pan to remove excess fat, but do not clean it. Heat olive oil in it over low heat, then add the onion along with a pinch of salt. Fry for 3-5 minutes, stirring, until soft. Add the garlic and cook for another minute, stirring occasionally.
Return the meat to the pan. Add tomato paste, mashed and diced tomatoes, basil, oregano and brown sugar, stirring to combine everything. Bring to a boil, then reduce heat to a minimum and cover with a lid, leaving it slightly ajar to let off steam. Simmer over low heat, stirring occasionally, for 60-90 minutes. Add salt, pepper and crushed red pepper flakes. Try it and adjust the seasonings if you want.
Boil the homemade noodles for two to three minutes. Arrange it in serving plates. Pour in meat sauce. This dish of homemade noodles and minced meat can be supplemented with chopped basil and grated parmesan.
