Butter rolls: recipes on sour cream, on yeast and without yeast

Making buns completely depends on which ingredients you will use. There is nothing complicated in cutting the dough for preparing a treat, however, if the hostess wants to make it herself, and not buy it in the store, then some effort will be required.

Depending on which buns you want to cook, there are 4 types of suitable dough. We will start by making pastry, which includes many pastry recipes. For it you will need the following components:

  • 50 g butter;
  • two tablespoons of vegetable oil;
  • half a glass of sugar;
  • one egg;
  • bag of milk (700 ml);
  • 800 g of flour;
  • 15 g of yeast.

Having prepared everything you need, you can begin to knead the dough:

  1. Heat the milk a little.
  2. Bring yeast in it.
  3. Beat the egg separately with the butter and sugar.
  4. After the yeast rises, mix them with the egg billet.
  5. Add vegetable oil.
  6. In a separate bowl, mix the flour and salt.
  7. Combine the ingredients and knead the dough.
  8. Cover the pot with the dough with a towel and reposition it in a warm place for 2-3 hours.
  9. After the dough rises, you can begin to implement the recipe for buns.

As a result of all the manipulations you should get material for 12 servings. Also, milk in this recipe can simply be replaced with sour cream. Butter buns from this will turn out even more magnificent.

Yeast-free dough

A delicious bun pastry recipe may not necessarily contain yeast. Even without them, you can prepare a quality basis for baking treats. In order to make dough for lush tasty and fragrant pies or rolls, you will need:

  • 500 grams of flour;
  • salt;
  • two perfect eggs;
  • water - 200 ml;
  • 2 tablespoons of vegetable oil;
  • a tablespoon of sugar.

If you plan to bake pies with meat or potatoes, then you can do without sugar. After preparing the products, you can begin to knead the dough. Its preparation is nothing special.

Flour is sieved directly on a clean table or large board. After that, it must be raked in a pile, leveled and a recess should be made in the center. It is in it that all the ingredients, including water, โ€œstackโ€. Beat the egg beforehand. The mass is mixed, then covered with a towel and so laid down for about half an hour. After that, you can start cooking from the dough.

The following type of dough is also used to make rich bun recipes. It can take up to 8 hours to cook it. And ideally, all 16, half of which occur at night. So you will need:

  • a pound of flour;
  • 350 grams of butter;
  • 300 ml of milk;
  • sugar - 60 grams;
  • 12 g of yeast;
  • a teaspoon of salt.

During the preparation, two different types of test will be mixed. Therefore, the preparation of sweet rich yeast buns will be very delayed. Free the day off to handle the manipulations with all the attention and accuracy.

  1. First you need to make a dough. To do this, add sugar in 100 ml of milk and crumble the yeast. Then sift there 100 g of flour. Stir and let rise for half an hour in a warm place.
  2. After the dough has risen, pour into a deep bowl and add the remaining milk and salt.
  3. While stirring, gradually add the rest of the flour. After the mass becomes wet, you will need to mix 50 grams of oil in the dough.
  4. Knead the dough for 15 minutes, and then send it to the refrigerator for 3-4 hours.
  5. The remaining 300 grams of oil needs to be thawed (just leave it warm, not in the microwave).
  6. Transfer the butter to a sheet of parchment. Top with another sheet.
  7. Roll the butter into a rectangular layer and refrigerate until you have to cook the dough. You will need to get it 15 minutes before continuing cooking.
  8. Sprinkle a little flour on the board. We spread the prepared dough on it.
  9. On the bun, make a deep incision crosswise. Extend the protruding edges to the sides to get a rectangle. Sprinkle it with flour on top and roll.
  10. Closer to the top edge is laid out rolled butter. Then the lower edge is tucked, hiding 2/3 of the surface. After that, the upper edge is wrapped. The sides are tightly pressed by hand until they stick together.
  11. Then the resulting rectangle unfolds with the short side facing the cook. Rolls out and folds three times. It is necessary to fold not half, but 1/3, first from the bottom, and then from the top. After this, the dough should be put in the refrigerator for an hour.
  12. After a while, remove the workpiece and repeat the rolling-folding procedure again. Again send to cool. This item is repeated 1-2 times until the required number of layers is reached. Remember that the more often the dough is folded, the thinner the layers and the more likely they are to break.

Everything, your dough is ready. Now you can start cooking. But before that, consider a method of preparing another type of dough.

Knead the dough

This recipe is not much different from the previous one, but at the same time a little easier. From this test, very tasty puffs with cheese and ham are obtained. In total you will need:

  • 450 g of flour;
  • 250 g butter;
  • one chicken egg;
  • a tablespoon of vodka;
  • 3 teaspoons of vinegar (9%);
  • salt;
  • 200 ml of water.

The cooking technique is elementary:

  1. Beat the egg in a glass. Add salt, vinegar, vodka to it. Stir until completely dissolved. Pour in water. The total volume should be 250 ml.
  2. Pour the liquid into 3 cups flour. It is possible on a table or in a bowl. Knead the dough. Beat it off the table, transfer to a bowl and leave to rest at room temperature for an hour.
  3. Using a food processor, beat a mixture of butter and 50 g flour. On parchment, roll it into a square. With the test, refrigerate for 15 minutes.

Then everything repeats the previous recipe. The dough and butter are folded in layers and rolled several times. After several repetitions, the dough is ready for baking.

The easiest way to make beautiful buns is not to be smart. Take the dough, the recipe of which we brought first. The resulting semi-finished product is divided into many small parts. They need to be rolled out, and then rolled into rolls (like croissants), and send to the oven. After the preparations have swollen, they must be greased with a beaten egg. That's all. Bake rolls at a temperature of 180 degrees for half an hour. The finished product can be consumed with condensed milk or jam. If desired, sprinkle the dough with raisins or berries when spinning the rolls.

In fact, there is no particular difference on which test is better to cook - with or without yeast. From yeast-free pies should be thick. Otherwise, the dough may dry and turn into a dry crust with a filling. Therefore, having rolled it, it remains only to choose the necessary form of buns without yeast. For example, you can divide the dough into small squares, lay the berries on them and blind together the corners. So you get delicious and fragrant baskets. Such baked goods are also baked at 180 degrees for half an hour.

Next, consider the simplest recipe for puff cinnamon rolls. For them, you will need 15 grams of cinnamon, as well as dough from the 3rd recipe. In addition, you can make a filling of cream 35% fat, lemon zest, sugar and eggs:

  1. In a separate bowl, combine the zest of one fresh lemon, 100 grams of fresh cream, a teaspoon of sugar and 1 egg. Put in the refrigerator to settle.
  2. Roll out the puff pastry, sprinkle cinnamon on both sides and roll into a tight straw. Cut it into cylinders, put on the edge and crush it by hand. The resulting โ€œpancakesโ€ should have a spiral / cinnamon pattern.
  3. Place the blanks in a metal mold for muffins or pudding, with a teaspoon, press them against the walls. After that, put in the oven for 10 minutes at a temperature of 180 degrees.
  4. When the buns swell and grab a little, remove them from the oven and take them with a spoon to get "wells." Pour the previously cooked stuffing into them and continue to bake until cooked.

On sour cream

Sour cream dough is a type of yeast. You will need:

  • flour - 200 g;
  • butter - 100 g;
  • sour cream - 100 g;
  • sugar - 100 g;
  • eggs - 2 pcs.;
  • 1 yolk for lubrication;
  • water - 1/2 tbsp .;
  • dry yeast - 1 tbsp

Pour dry yeast into a deep bowl with warm water, add 1 tsp. sugar and leave on the table. After 20 minutes, a thick froth will appear on the dough. Mix eggs, sugar, sour cream and butter. Then pour the dough, mix. Gradually pour the sifted flour. Knead the dough and leave it in a warm place for 2 hours. Then we form buns, grease with yolk and sprinkle with sugar. Letโ€™s distance. Bake for 20-30 minutes at 190 degrees.

In addition to the basic filling, which is used in the recipe for buns during cooking, there are many ways to add attractiveness and flavor to a dish:

  1. The simplest of them is grated chocolate. Just sprinkle hot buns on them and let them melt.
  2. Slightly more complicated is homemade caramel. Pour sugar into a saucepan and moisten a little with water. Put on a strong fire. When the sugar is melted, it will be possible to pour them ready buns. Just do not forget to immediately wash the pan, otherwise then it will not be cleaned.
  3. Ground poppy and cinnamon can also be used not in the main recipe, but as an additive on top.
  4. Any nuts. It is advisable to break them into small pieces so that it is more convenient to chew.
