Chewing marmalade: history, preparation process and a few words about the largest producers: Fru-fru and Haribo marmalade

What sweets the modern confectionery industry does not indulge us with: sweets with various fillings, candies, chocolate. And what kind of marmalade is produced! All forms and tastes, able to satisfy the wishes of the most inveterate sweet tooth. And most importantly, the price of chewing marmalade does not "bite" at all - it is affordable for everyone, which, of course, is good. Jelly figurines are one of the favorite treats of children and adults of all ages.

A bit of history

A wide range of marmalade

Surely everyone remembers the magic sweet orange slices sprinkled with sugar. In this form, marmalade has been produced for many years. But few know that it was originally not made from oranges at all.

The word "marmalade" comes from the French marmalade. And they called this word a product that did not at all resemble the present sweetness. This is what quince jam was called. Later it began to be made from oranges, gradually making everything more dense. There is a legend that marmalade was invented in Dundee in 1790 in an attempt to save a load of rotting oranges, which were transported by a ship caught in a storm. But this story has no documentary evidence.

At first, rose water and musk were added to the treat, then they were cut into squares, beautifully packed and presented as a gift. Outwardly, it resembled another popular dish - Turkish delight. Over time, its composition has somewhat changed - agar-agar, gelatin and pectin were added to it. People quickly fell in love with a simple sweetness, and they learned how to make marmalade not only with different tastes, but also in different forms.

In 1920, a German resident, Hans Riegel, founded the Haribo company, one of the largest manufactures engaged in the manufacture and sale of chewing sweets. The variety of tastes and forms of their products amazes the imagination of even an adult: multi-colored beans, geometric shapes, sticks, Christmas marmalade, hearts with a delicate cherry and strawberry flavor, and even animals and inhabitants of the ocean.

But the most beloved and recognizable form is jelly bears of different colors with a fruity taste. They can be found in almost any store in the country. Bright, in beautiful packaging, and most importantly - delicious. They beckon children and their parents to themselves.

The German giant has many competitors in the market. So, “Fru-fru” marmalade is no less famous - a product of the Russian company “Sweet Fairy Tale”. It is made at the Czech Candy plus factory using modern equipment. In terms of assortment, it does not lag behind its German competitor. Let's take a short virtual tour of this factory and find out how everyone's favorite treat is made.

Cooking consists of several stages:

  • boiling the main ingredients;
  • cooling the resulting mass;
  • special casting;
  • stand;
  • drying;
  • starch removal from the product;
  • packing.

The basis of fru-fru marmalade is sugar, gelatin, grape juice and glucose syrup. All these ingredients fall into a special boiler, where they are boiled. During the preparation, citric acid, dye and flavorings are added there. The mixture is then sent to a casting machine, from where the hot syrup gets into trays filled with a layer of corn starch. Various forms are printed there that the marmalade will take at the end of its path. At this stage, the future delicacy cools and dries.

After a day, the frozen jelly is cleaned of starch, and then gets to the next stage - in huge drums. Here "Fru-fru" marmalade is processed with a mixture of natural oils. After this procedure, the jelly figures become smooth and shiny, as we used to see them in the package.

The final point of goodies is a packaging machine that distributes sweets into packages, labels them and sets a production date. After that, lorries transport ready-made sweets to various retail outlets where they will be waiting for their buyer.
