Bagels with nuts: a treat for every taste

To offer guests a cup of tea without dessert is unthinkable. In this article, we share a recipe for a very simple and quick to prepare goodies - sand bagels with nuts. Cooking time is about an hour.

They are prepared from shortcrust pastry, inside a nut filling. You can use any nuts: peanuts, walnuts, hazelnuts, almonds, cashews.

Shortbread dough according to the classic recipe

The recipe for bagels with nuts is quite simple, even novice housewives can do it. First make shortcrust pastry. To do this, take:

  • cold butter or margarine - 200 g;
  • granulated sugar - 1 cup;
  • 3 cups of wheat flour;
  • 1 egg yolk;
  • 1 tablespoon of fat sour cream;
  • 1 teaspoon of baking powder for dough;
  • 1/2 teaspoon of salt;
  • some powdered sugar for sprinkling.

All ingredients are best used chilled. Try to cook the dough quickly so that it stays cool. This is the main secret of making shortcrust pastry. Then bagels with nuts are crumbly and just melt in your mouth.

Butter with flour

In a deep bowl, grate the butter on a coarse grater and mix with sugar with a fork. Add the egg yolk, sour cream, salt and rub everything with a tablespoon. Pour in flour, baking powder for dough and knead quickly. Keep in mind that you cannot knead the dough for a long time, otherwise the cookies will not be crumbly. The ideal time for kneading is no more than 3 minutes.

The dough should be homogeneous, and the structure should resemble elastic wet sand (like children's kinetic sand for modeling).

Form the finished dough into a ball, wrap it in cling film and leave to cool in the refrigerator for about 20 to 30 minutes. Put the rolling pin for the dough there, and then roll the dough out.

Tip: before adding flour, divide the base for the dough into two parts. In one, add cocoa (1 - 2 tablespoons, to taste). Knead two pieces of dough - with and without cocoa. Then you get bagels with nuts of two types: simple sand and chocolate.

Nut filling for bagels

The dough is cooled, so you can do the filling. For the filling, you need 1.5 - 2 cups of nuts and a glass of sugar. Nuts must be taken peeled from the shell.

In our case, we will use walnuts for the filling. In order for the nut to give bitterness and become soft to the taste, pour boiling water over it for 5 to 10 minutes. Then drain the water, and dry the nut in a heated dry frying pan.

If other nuts are chosen for the filling, then to give an additional taste they need to be fried. Frying time 1 - 2 minutes in a well-heated frying pan without oil.

For the filling, you need to crush the nuts in a mortar or grind in a coffee grinder.

Chopped nuts

If you don’t have one or the other at hand, use a regular mashed potato pusher. Combine crushed nuts with sugar until smooth and grind into a thick mass, which should not crumble. If the filling is still loose, add a little butter.

The filling for the sand bagels with walnuts is ready.

During this time, the shortbread dough has cooled sufficiently. You can start making bagels.

Bagels: how to roll beautifully

It is better to prepare a baking tray in advance. To do this, simply cover it with baking paper (parchment, or tracing paper).

Divide the dough into 2 parts. Put one in the refrigerator.

Roll the other part of the dough with a chilled rolling pin into a round layer 3-5 mm thick. One piece of dough is enough for one baking sheet.

Shortbread dough

Cut it into triangles.

Put the nut mixture on a wide part of the triangles. Wrap the corners of the base of the triangles inward - towards each other. Roll the bagels with nuts in a tube - towards the top of the triangles.

Put the bagels on the prepared pan. Leave a distance of about 2 centimeters between them (do not forget that they will increase in volume).

Bagel baking

Now you can turn on the oven and heat it to a temperature of 160 - 180 degrees.

While it is warming, prepare bagels with nuts from the second part of the dough in the manner described above.

Place the baking sheets with the future treat in the oven and bake for 20 - 25 minutes. The dough should brown well.

Sprinkle hot bagels with sugar or powdered sugar and loosely put on a wide dish.

Tip: try baking bagels from other types of dough, such as puff pastry. It is already sold ready-made (frozen) in many stores.
