Summer recipes: from fresh vegetables to exotic rolls

A well-known fact that does not require confirmation, can not be denied or even disputed: summer is the best time to monitor your health and eat the most wholesome and delicious dishes properly. Summer recipes are so numerous and varied that just listing their names will take a huge amount of time, not to mention each one to describe.

But still there are some dishes that our country knows how to cook and love, and which appear on our tables with enviable regularity every summer. Of course, first of all, these are dishes from fresh vegetables, for example, fresh salad. Refueling will require vegetable oil, mayonnaise or sour cream, as well as your favorite spices (at least salt). When planning to execute summer recipes, you should remember one simple rule that is common to all: vegetables should always be washed, peeled (if they, of course, need it) and cut into cubes of the same size. Small or large - depends on the taste preferences of the cook, however, they should be of the same size. When all the ingredients for the salad are properly ground, they can be gently mixed in one salad bowl, seasoned, seasoned with salt to taste and garnish with greens, after which, after letting it cook for half an hour, serve it to the table.

It should be noted that summer recipes do not at all require that all vegetables used for cooking dishes are fresh - on the contrary, it is in the summer in our country that it is customary to conduct one of the most mysterious rituals, incomprehensible to foreigners, but of great importance for cooking. Naturally, this is pickling cucumbers. You should take the cucumbers for it (depending on the size - up to 1 kg.), Garlic (5-6 teeth.), Bay leaf (10 pcs.), Green pepper and dill umbrellas. In addition, you have to take care of the brine - take water (3 l.), Sugar (100 g.) And salt (50 g.). The best recipe for pickling cucumbers is as follows: prepare jars, on the bottom of which put a little of everything - on a chopped garlic clove, a slice of pepper, a bay leaf and a sprig of dill. Next, small green cucumbers are placed in the jars, which are poured on top with 9% vinegar (10 ml each) and hot brine. After this, the jars should be sterilized for a quarter of an hour, rolled up tightly with lids and sent to cool - always upside down and covered with towels.

And this recipe will offer to prepare an exotic dish - rolls, but adjusted for Russian reality and the favorite product of our compatriots. So, we meet: rolls with cucumber recipe. You need to take crab meat or chopped sticks (100 gr.), Rice (150 gr.), Fresh cucumber (1 pc.), Noriya seaweed (2-3 leaves) and rice vinegar (75 gr.). Of the additional devices, it is worthwhile to prepare a bamboo mat, without which it will be impossible to roll up rolls, cling film and a sharp knife. Be sure to properly boil the rice - until half cooked so that it is not raw, but at the same time does not lose its stickiness, and during cooking, cut into small strips and slices of cucumber and crab meat (sticks). When the rice is ready, you can start assembling the dish: put a film on the bamboo mat , then a nori sheet (its smooth side should be at the bottom) and boiled rice. Next, chopped seafood and cucumber are sent to the rice layer, after which the roll is folded using a bamboo mat until the edges of the rice are joined. After that, it remains only to slightly wet the free parts of the nori algae sheet, glue them together, fixing the dish, give it an even shape and cut into several identical pieces.
