One of the most protein-rich foods is fish, including perch. There are a lot of recipes ; you can familiarize yourself with some of them in this article.
Perch recipe
Clean the perch weighing 500 g from the scales in the direction from the tail to the head. The insides, head and tail cut and discard. Grate the perch with a mixture of herbs and spices: pepper, basil, oregano, salt, ginger. Set aside for half an hour. Peel the onion and cut into thin slices. Pepper, salt and pour vinegar over them.
Peel and dice the carrots, 2 potatoes and bell peppers. Put the vegetables on a baking sheet and put in the oven until almost baked.
Sautรฉ the pickled onions in a pan in olive oil for 10 minutes to make it soft.
Slice 2 tomatoes and finely chopped basil and parsley.
Put perch on a baking sheet, and around it potatoes, onions, carrots, peppers. Sprinkle with herbs and pour olive oil on top. Spread the tomatoes evenly, pour in a little hot water and put on the bake. After 45 minutes, turn off the oven and decorate the dish with olives.
River Bass Recipe
Prepare the marinade: put in a bowl a teaspoon of grated lemon peel, as well as pepper, thyme, oregano, salt. Add 20 g of olive oil and 20 g of lemon juice. Cut 800 g fillet of river perch into pieces, dip in marinade and put on a baking sheet, oiled. Put in the oven for 15 minutes, then put on plates and serve.
Ham and Perch Recipe
Cut 2 perch weighing 500 g each. Salt and pepper them, pour over lemon juice and refrigerate for an hour to marinate. Pour olive oil into the bottom of the refractory glass mold . Cut 150 g of ham into long strips. Bread in the breadcrumbs, stuff with ham and put in shape. Peel and cut into slices 2 kg of potatoes. Cover them with fish, salt and water with mayonnaise and marinade. Cut olives and sprinkle them in a dish. Put in the oven for an hour.
Recipe for perch stewed with potatoes and lard
Cut a kilogram of perch and put your head in a pot of water to prepare the broth. Cut into circles 6 potatoes. In a second pan lay the potatoes and fish in layers. Top with sour cream (glass). Cut 3 onions and sprinkle them with fish. Add bay leaf, sliced โโfinely 150 g of lard. Pour the resulting broth and put in the oven to stew until the bones of perches soften. You can eat the whole fish.
Tomato perch recipe
Salt fillet of perch with a total weight of 800 g and pour over lemon juice. Cut 4 tomatoes with a โcrossโ and salt. Finely chop 2 tomatoes, onion and 100 g of lard. Pour oil into a mold, put perch and 4 tomatoes. Fry the onions in a frying pan in the fat. Then add tomatoes and ยผ cup dry white wine. Pour the resulting sauce into a form with fish fillet. Put in the oven for about 15 minutes. Cut shallots and a steep egg. Mix with 60 g of yogurt, mayonnaise, cream and 25 g of mild mustard. Dress fish with this sauce.
Recipe for perch with onion sauce
Boil the heads and bones of 4 perches in the broth. Melt 40 g butter in a deep pan. Add 2 chopped onions, fillet of perch. Sprinkle with pepper, spices and salt. Pour the fish with broth and 200 g of dry white wine. Cook for 15 minutes. Get the perch with a slotted spoon, and pour 200 g of cream into the broth. Stir until thickened. Beat the egg yolk, mix it with a portion of the sauce, and then pour into the pan. Sprinkle the fish with spices, then pour the sauce and serve with boiled rice.
Roasted perch in foil
Clean and gut the carcass of the perch. Rinse and pat dry with a paper towel. Grate it inside and out with salt, seasoning and pepper. Make horizontal cuts on the carcass of the perch and put half the onion rings in them. Wrap the fish in food foil and bake. After 20 minutes, unfold the foil, grease the fish with a mixture of grated cheese and sour cream, wrap it again and put the mold in the oven for 15 minutes.
